SALAD SERIES: Shredded Chicken, Pumpkin & Grape Salad w/ Tarragon Yoghurt & Anchovy Crumb

I promise you you’ll be making this on repeat. Inspired by my girls @thehungryhobbit and @sophiapelizzoli and their discovery of the @natoora pumpkins!

Sweet, caramelised pumpkin, juicy roasted grapes, bitter radicchio, creamy tarragon yoghurt and a salty, crunchy anchovy pistachio crumb. Honestly, this is RIDICULOUSLY good. A complete meal that feels a little bit fancy but requires very little effort. My kind of cooking!

INGREDIENTS
For the salad
* 1 small pumpkin, cut into wedges
* 1 head radicchio, roughly torn
* 1 generous handful of grapes
* 2–3 handfuls shredded roast chicken
* Olive oil
* 1–2 tbsp muscatel vinegar
* 1 tsp honey
* Zest of 1 lime
* Salt & pepper
Tarragon yoghurt
* 1 generous handful tarragon
* 3 tbsp olive oil
* Splash of muscatel vinegar
* 3–4 tbsp Greek yoghurt
* Salt
Anchovy crumb
* 6 anchovy fillets + a little of their oil
* 1 handful pistachios, chopped
* 2 tbsp panko breadcrumbs

METHOD
1. Roast the pumpkin with olive oil and plenty of salt at 200°C fan for 20 mins.
2. Add the grapes, radicchio, muscatel vinegar, honey and lime zest. Roast for another 15–20 mins until everything is golden, sticky and caramelised.
3. Whizz the tarragon with olive oil, a splash of muscatel vinegar and salt. Stir through the Greek yoghurt.
4. Finely chop the anchovies and add to a frying pan with a little of their oil. Add the pistachios and panko, then fry until golden and crunchy.
5. Spread the tarragon yoghurt over a serving platter, pile on the roasted vegetables and grapes, then add the shredded chicken. Finish with the anchovy crumb and a drizzle of olive oil.
DON’T skip the anchovy crumb. It’s salty, crunchy, savoury perfection and brings the whole thing together.
