Toss them hot in the Calabrian chile butter and finish with charred lemon, Parmesan, parsley, lemon zest, and flaky salt.

Stop pulling chicken thighs at 165°F.

That temp is safe, but thighs usually eat better closer to 175–185°F. More rendered fat, softer connective tissue, juicier meat, and better texture.

I cooked these hot on the @keveri.usa H Mini with a simple lemon-garlic marinade.

Lemon Garlic Chicken Thighs

3 lb bone-in chicken thighs
1 1/2 tbsp dried oregano
1/4 tsp cumin seeds
1/4 tsp black peppercorns
1 head garlic, minced
2 tbsp olive oil
1 1/2 tbsp sea salt
Juice of 2 lemons

Grind the cumin and peppercorns, then mix with oregano, garlic, olive oil, salt, and lemon juice.

Add the chicken and marinate at least 30 minutes, but overnight is better.

Heat the grill to around 450°F. Grill until the skin is deeply browned and crisp, flipping as needed, then pull the thighs around 180°F internal.

Rest 5–10 minutes before serving.

Simple marinade. Hot fire. Better chicken.

Toss the hot wings in the glaze, let them tack up over indirect heat for another minute or two, then finish with toasted sesame seeds, scallions, lime zest, and flaky salt.

Pull the wings around 185–195°F for tender meat and crisp skin.
