Ingredients (Serves 4 people )
* 4 Tbs Olive Oil
* 1 Package Smoked Apple Sage Field Roast Sausage
* 2 Cups Paella Rice
* 4 Cups Veggie Broth
* 8 garlic cloves minced
* 1 large red bell pepper diced (save 4 slices for decoration)
* 1 Cup Frozen Lima beans (defrosted) this is personally the best part in my opinion
* 1/4 Cup Peas
* 2 Roma tomatoes grated
* 1/3 Cup Italian green beans
* 1 tsp Saffron (non negotiable)
* 1 tsp Smoked Paprika
* Salt to taste
* Lemon for garnish
-Cut the red bell peppers into small cubes and save some slices for garnish, 
-Finely mince the garlic.
-Add the olive oil to a flat bottom skillet or a paella pan, add the Smoked Apple Sage Field Roast Sausage, sauté until golden, add the garlic, sauté for 40 seconds then add the rest of the vegetables and the crushed tomatoes. 
-Stir delicately for 2 minutes.
-Add the broth, the saffron, salt, and pepper, gently SPRINKLE the rice around the pan, mix it gently or shake the pan, (don’t stir with a spoon) then turn the heat to high and let it cook for 10 minutes.
-After 10 minutes, lower the heat to medium-low for 3 minutes, then back to high again for 2 minutes, in order to develop the socarrat, that crispy caramelized bottom.
-Turn off the heat, cover the paella with aluminum foil and kitchen towels and let it rest for 5 minutes. Remove the foil and towels, garnish with parsley, lemons and red bell peppers and serve it with a lemon wedge and a drizzle of extra virgin olive oil.
-A good saffron will make the whole difference in this dish, choose a good quality Spanish saffron! Also, the rice plays a crucial role in the paella in the US you can find Arborio rice is you can’t find Spanish paella rice
