Apple pie, but make it a cookie 🍎🍪✨ These are basically the shortcut version of apple pie: premade dough, gooey cinnamon-spiced apple filling, and a maple glaze that makes them dangerously easy to eat.

APPLE PIE COOKIES

For the cookies:
1 package refrigerated sugar cookie dough
Apple pie filling (recipe below)

Apple Pie Filling:
2–3 apples, peeled + finely diced
½ cup brown sugar
3 Tbsp butter
2 Tbsp apple cider
1 Tbsp cornstarch
1 tsp pumpkin spice

Cook apples and butter over medium heat for 3–4 minutes, until the apples start to soften. Stir in brown sugar and pumpkin spice. Mix the apple cider and cornstarch together, then add to the pan. Cook for another 1–2 minutes, stirring, until thickened. Let cool.

Roll out the cookie dough and cut into circles. Place a spoonful of apple filling in the center, then top with strips of dough in a lattice pattern. Press the edges to seal and bake according to the cookie dough package directions, until golden.

Maple Glaze:
1 cup powdered sugar
2 Tbsp maple syrup
1–2 Tbsp milk or heavy cream
½ tsp vanilla

Whisk everything together until smooth, adding a little more milk if needed. Drizzle over cooled cookies and let the glaze set.

APPLE PIE CUPCAKES🥧🍂

🍎 Apple Cupcake Base

• 2 cups all-purpose flour
• 1 tsp baking powder
• 1 tsp baking soda
• ½ tsp salt
• 1 tsp pumpkin spice
• ½ cup unsalted butter, melted
• ½ cup granulated sugar
• ¼ cup packed brown sugar
• 2 large eggs, room temperature
• ½ cup milk
• 1 tsp vanilla extract
• 1 ½ cups peeled and finely chopped apples

1. Preheat oven to 425°F. Line a 12-count muffin pan with liners.

2. Whisk together flour, baking powder, baking soda, salt, and pumpkin spice.

3. In a separate bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, milk, and vanilla.

4. Add the dry ingredients to the wet ingredients and gently mix until just combined. Fold in the apples.

5. Divide batter among the liners, filling each almost to the top. Bake for 5 minutes at 425°F, then reduce oven temperature to 350°F and bake for another 15–18 minutes, or until a toothpick comes out clean. Let cool completely.

🍏 Apple pie filling 

• 2–3 apples, peeled, cored, and finely diced
• ½ cup brown sugar
• 3 tbsp butter
• 2 tbsp apple cider
• 1 tbsp cornstarch
• 1 tsp pumpkin spice

1. Melt butter in a skillet over medium heat. Add apples and cook for 3–4 minutes, until they begin to soften.

2. Add brown sugar, apple cider, cornstarch, and pumpkin spice. Stir to combine.

3. Cook for another 5–7 minutes, stirring occasionally, until the apples are tender and the filling is thick and syrupy. Let cool completely.

🍁 Maple cream cheese icing 

• 8 oz cream cheese, softened
• ½ cup unsalted butter, softened
• 2 cups powdered sugar
• 2 tbsp pure maple syrup
• 1 tsp vanilla extract
• 1 tsp pumpkin spice
• Pinch of salt

1. Beat cream cheese and butter until smooth and fluffy.

2. Add powdered sugar, maple syrup, vanilla, pumpkin spice, and salt. Beat until creamy and smooth.

🧁 ASSEMBLY

Spoon a dollop of apple pie filling onto each cooled muffin. Transfer the icing to a piping bag fitted with a small round tip and pipe lines back and forth over the apple filling in a lattice pattern, just like the top of an apple pie. Finish with
