trust me when i say you will want to save this recipe! these salmon tacos are SOOO GOOD. and such an easy weeknight dinner idea. the salmon is marinated for 30 minutes (or longer if you want to prep ahead of time) and it comes out so juicy and flavorful. you can make these in the skillet orrr the air fryer (my preferred method). plus they save so good for a leftovers too. the cottage cheese cilantro slaw is... chef’s kiss.

1 lb salmon (cut into 1-inch pieces)
3 tablespoons chipotle peppers in adobo sauce
2 tablespoons avocado oil (or olive oil)
2 tablespoons honey
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon cayenne pepper
¼ teaspoon chili powder

2 cups cabbage slaw mix
⅓ cup cottage cheese
Juice of ½ lime
½ tablespoon water
⅛ teaspoon salt

Tortillas of choice, Fresh cilantro, Crumbled cotija cheese, Hot sauce, Fresh lime wedges. 

Marinate the salmon in a quick chipotle honey sauce for at least 30 minutes. Blend together the creamy cottage cheese cilantro lime slaw, then air fry or pan cook the salmon until caramelized and tender. Load into warm tortillas and top with slaw, cilantro, cotija, pickled onions, hot sauce, and extra lime. SO easy and SO good.

1 cup natural peanut butter
⅓ cup coconut oil (softened to room temperature)
1 large egg
⅔ cup maple syrup
1 teaspoon vanilla extract
2 cups gluten-free all-purpose flour (or regular all-purpose flour)
½ teaspoon baking powder
½ teaspoon salt
1 cup jam or jelly of choice

Preheat oven to 350°F.
Line a 9×9 baking pan with parchment paper.
In a large mixing bowl, whisk together the peanut butter and softened coconut oil until smooth.
Add the egg, maple syrup, and vanilla extract. Whisk until fully combined.
Add the flour, baking powder, and salt. Stir until a thick dough forms.
Press about 2 cups of the dough evenly into the bottom of the prepared pan.
Spread the jam or jelly evenly over the dough layer.
Tear the remaining dough into small pieces and scatter over the jam layer, leaving some jam visible for that classic PB&J look. Bake for 30–32 minutes, or until the top is lightly golden and set. Let cool completely in the pan before lifting out and slicing into 9 bars & enjoy!! 🤤

if you’re in charge of mother’s day brunch but don’t feel like going all out… make this chocolate covered banana chia pudding that is thick, scoopable, and layered with a creamy banana yogurt that makes it feel way fancier than it is. I used melted @HuKitchen Salty Dark chocolate for the base and it gives it that rich chocolate flavor without being overly sweet. made with only 4 ingredients and is my favorite chocolate!! you guys have to make this! #hupartner 
Chocolate Banana Chia Base
1/2 cup milk of choice
1/2 Hu Kitchen chocolate bar (chopped)
1 medium ripe banana
1 tbsp maple syrup
1 tsp vanilla bean paste
Pinch of salt
1 cup plain Greek yogurt (0% or 5%)
1/3 cup chia seeds 

Creamy Banana Yogurt Layer
1 cup plain Greek yogurt
1/2 ripe banana
1–2 tbsp maple syrup
1/2 tsp vanilla extract
Pinch of salt 

In a small bowl, melt the Hu chocolate with the milk (microwave in 20–30 second intervals or over a double boiler), stirring until smooth. Let cool slightly.
In a blender, blend together melted chocolate milk, banana, maple syrup, vanilla, salt. Blend until completely smooth. Mix together the chocolate milk with yogurt then mix in the chia seeds. refrigerate overnight or at least 4 hours. made the creamy banana yogurt in a blender. layer them and enjoy!!
