GREEK LOADED SWEET POTATOES✨ With roasted chickpeas, lemon tahini drizzle, homemade tzatziki and hummus! Packed with vegetarian protein, fiber and healthy fats! A must make for an easy dinner meal.

Here’s what you need:

2-3 sweet potatoes
1 can chickpeas, drained and rinsed
1 tsp each paprika, garlic powder, onion powder
2 tbsp olive oil 
Salt and pepper to taste

Lemon Tahini Sauce
1/3 cup tahini
3 tbsp lemon juice
2 garlic cloves, finely minced or grated
1/2 tsp salt
1/4 tsp pepper
1/4 cup water, more as needed 

Tzatziki
3/4 cup greek yogurt
2 tbsp olive oil
2 tbsp grated cucumber (optional)
1 garlic clove, grated or finely minced
2 tbsp dill
1 tbsp lemon juice
1/4 tsp salt

Toppings: hummus, feta cheese, dill, olive oil

Preheat oven to 425F.

Wash and pat the sweet potatoes dry. Use a fork to poke a few holes then to a baking sheet and toss in 1 tbsp olive oil, salt and pepper. Transfer to the oven for 30 minutes. 

Next pat the chickpeas dry (very dry). Once the potatoes have cooked for 30 minutes, toss the chickpeas in remaining 1 tbsp olive oil and spread evenly on the same baking sheet. Transfer back to the oven 20-25 minutes, shaking the chickpeas halfway, until chickpeas are golden and crispy and potatoes are fork tender.

Meanwhile, make the tahini sauce by whisking all ingredients except the water. It should start to get thick. Add water and continue whisking to desired consistency. Next make the tzatziki by whisking all ingredients.

Remove sheet pan from the oven. Transfer the chickpeas to a bowl and toss in the spices and salt and pepper to taste. Once the potatoes are cool enough to handle, slice open lengthwise and fluff insides with a fork. Season the insides with salt and pepper. 

Add some chickpeas to the potatoes with a scoop of tzatziki, hummus, feta, Kalamata olives and a drizzle of the tahini sauce. Finish with dill and olive oil if desired and salt and pepper to taste.

Peanut Butter Protein Cookies✨ 10g protein per cookie, thru come out soft and moist and packed with peanut butter and chocolatey goodness!

Here’s what you need:

1 cup peanut butter (natural runny kind)
3/4 cup greek yogurt
1 egg
2-4 tbsp honey or maple syrup 
1/2 cup oat flour
Chocolate chips and chopped peanuts if desired
Sea salt to top

Preheat oven to 350F.

Whisk the peanut butter, Greek yogurt and honey until combined. Fold in the oat flour, nuts and chocolate chips, if using. Scoop 10 cookies onto a baking sheet and flatten to form a cookie shape as these will not spread much in the oven.

Bake for 10-15 minutes until outsides are golden and inside still looks soft. Bake on the lower end for chewier cookies. Let cool for 10 minutes before transferring to a wire rack to cool completely.
