A few things most people don’t know about me… 🤎

• I stay quiet when I’m hurting.

• I trust very few people.

• My silence says more than my words ever could.

• I love with loyalty, never half-heartedly.

• When life gets heavy, I tend to disappear for a little while.

• I care deeply, even when I don’t always show it.

• I forgive more than I probably should.

• I overthink every little detail.

• Small words can leave deep scars.

• I rarely forget how someone made me feel.

• I crave peace more than attention.

Funny how you can share so much of your life online and people still only know a small piece of who you really are.
Homemade Chewy Peanut Butter Granola Bars 🍫🥜

Soft, chewy, loaded with peanut butter, chocolate chips, and marshmallows! These are so easy to make, perfect for lunchboxes, and a whole lot better than store-bought.

INGREDIENTS

* 4 cups quick oats (certified GF if needed)
* 3 cups crispy rice cereal (certified GF if needed)
* ½ tsp sea salt
* 1 cup butter
* ¾ cup honey
* ½ cup packed brown sugar
* 1 cup creamy peanut butter
* 2 tsp vanilla extract
* 1 cup mini marshmallows
* 1 cup mini chocolate chips

INSTRUCTIONS

1. Line a 13×18-inch sheet pan with parchment paper.
2. In a large bowl, combine oats, crispy rice cereal, and salt.
3. In a saucepan over medium heat, melt butter, honey, and brown sugar together. Bring to a gentle boil and cook for 2 minutes, stirring frequently.
4. Remove from heat and stir in peanut butter and vanilla until smooth.
5. Pour over the oat mixture and stir until completely coated.
6. Let cool for 5–7 minutes, then fold in marshmallows and chocolate chips.
7. Spread evenly into the prepared sheet pan and press down VERY firmly using parchment and the bottom of a measuring cup.
8. Let set at room temperature for 1–2 hours, then refrigerate for 20–30 minutes before slicing.

Slice into bars and enjoy!

TIP: The secret to chewy granola bars that actually stay together…cooking the honey mixture long enough and pressing everything firmly into the pan!

Store in an airtight container in the refrigerator for up to a week. Perfect for grabbing on your way out the door!

Chop once. Thank yourself on a whole bunch of busy nights. 🙌🏼

Next up in Stocktober: homemade mirepoix! Just diced onions, carrots, and celery, bagged up and tucked in the freezer so the start of dinner is already done.

I use roughly 2 parts onion, 1 part carrot, and 1 part celery. Portion into freezer bags, press out the air, flatten, label, and freeze!

Pull out a bag for soups, stews, sauces, or pot pies. Add straight to the pot from frozen and sauté until softened.

A little prep now means fewer dishes, less chopping, and one less thing to do at 5 p.m.

Don’t let fall slip away without making the cozy meals and sweet treats you’ve been craving. 🤎
