Homemade Soft Pretzels Recipe 🥨✨

Soft, chewy, buttery pretzels made from scratch because if I can make it at home, I’mma make it at home… and so can you. 🧡

INGREDIENTS: 

For the Pretzel Dough: 

- 1½ cups warm water (105–110°F)
- 2¼ tsp active dry yeast
- 1 tbsp brown sugar
- 1 tsp salt
- 2 tbsp melted butter
- 4 cups all-purpose flour, added gradually

For the Baking Soda Bath:

- 8 cups water
- ½ cup baking soda

For Topping: 

- 1 egg, beaten (optional, for browning. I didn’t use an egg)
- Coarse kosher salt
- 1–2 tbsp melted butter, for brushing after baking

INSTRUCTIONS:

1. Make the dough: Add warm water, brown sugar, and yeast to your mixer bowl. Let sit for 5–10 minutes, until the yeast becomes foamy.

2. Add the ingredients & knead: 
Add melted butter, salt, and flour gradually. If using a mixer, knead with a dough hook on low for 5–7 minutes. If kneading by hand, knead for 10 minutes, until the dough is smooth and slightly tacky. 

3. Let it rise: Place the dough in a lightly greased bowl, cover, and let rise for about 1 hour, or until doubled in size. Mine took 45 minutes.

4. Divide & shape: Punch down the dough and divide into 8 equal pieces. If you have a kitchen scale, aim for about 3.3–3.5 oz per piece. Roll each piece into a rope about 20–25 inches long. Shape each rope into a pretzel and pinch the ends down so they stay in place.

5. Make the baking soda bath:
Bring 8 cups of water to a gentle boil, then add ½ cup of baking soda.

6. Dip the pretzels: Carefully place each pretzel into the baking soda bath for 5–10 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.
Tip: The amount of time can depend on how thick your pretzels are, so don’t over-soak them.

7. Add the topping: 
If using an egg wash, brush each pretzel lightly with beaten egg (The egg wash is optional, but it will give you a deeper golden-brown color), then sprinkle with coarse kosher salt.

8. Bake: Bake at 450°F for 15 minutes or until golden brown. If they need a little more color, give them a few additional minutes. 

9. Finish: Brush the warm pretzels with melted butter for that soft, buttery finish.
