Im going to be making really simple meals that are filling, have veg or protein (or both) in them & ease my day! 🍔 I made these delicious honey BBQ pull apart burgers. I even assembled them together so I’m not making them one by one. With a side of crunchy veg like carrots and cucumbers, dinner is done! Ingredients: - 2 chicken breasts - 1/4 cup BBQ sauce @heinz_uk - 4 tbsp of honey - seasoning: 1/2 tsp of salt, garlic powder & black pepper - cheese of choice (I used sliced and grated cheddar) Method: - boil and shred your chicken breasts using a fork. - add in your BBQ sauce and honey alongside your seasonings. - assemble your buns on a tray & start adding your fillings, I did lettuce, chicken, cheese slice and cheddar cheese - add your bun tops & cover in foil. - pop into the oven for 15 mins - brush with melted butter & parsley If you have a summer survival meal, please share below! Ingredients: - 1 tub of @eat.alterego alterego cottage cheese 200g - 1 cup of frozen raspberries - 1/2 cup of whole milk - 2tbsp of honey - Dark chocolate Method: - blitz your cottage cheese with raspberries, milk & honey. - Pour into your popsicle moulds (you can also use an ice pop bag if you don’t have moulds) and freeze for minimum 3 hours - Dip into melted dark chocolate & set in the freezer for 15 mins Enjoy!

We’re talking bigger portions, less standing time in the kitchen & ultimately saving your sanity Ingredients: - 400g passata - 2 large courgettes slices lengthways - 200g soft cheese - 1tbsp of tomato puree - seasoning to taste (1/2 tsp salt, black pepper, parsley & mixed herb) - 1 heaped tsp of finely diced garlic - 400g dried pasta Method: - in an oven proof dish add all your ingredients except your pasta. Roast in the oven at 180 for 15mins until the courgette has softened. Blend the courgettes and add back into your sauce - boil your pasta and add to your sauce. Add 1/4 cup of pasta water & stir well. Enjoy!
