Here’s an Italian dish you might not know about.

If you’ve never had gnudi, think of them as the soft, pillowy filling of ravioli, just without the pasta!

They’re traditionally made with ricotta, often with spinach, but I wanted to give them a little fall twist with roasted butternut squash. And of course, I had to finish them with brown butter and crispy sage.

Butternut Squash Gnudi with Brown Butter and Sage

Ingredients

For the Gnudi:
1 medium butternut squash (about 2¾ lb / 1.2-1.3 kg), halved lengthwise
2 tsp olive oil
Pinch of salt, for roasting
1 cup (245 g) whole-milk ricotta, drained
1 large egg
½ cup (45 g) finely grated Parmigiano-Reggiano
¾ cup (95 g) all-purpose flour, plus more for shaping and dusting
½ tsp (3g) fine sea salt
Pinch of freshly grated nutmeg

For the Brown Butter and Sage Sauce:
6 tablespoons (85 g) unsalted butter, divided
10-12 fresh sage leaves
⅓ cup (30 g) finely grated Parmigiano-Reggiano
1 cup (240 ml) reserved gnudi cooking water, as needed
2-3 tbsp heavy cream, optional (see notes)
Freshly ground black pepper, for serving
Shaved Parmigiano-Reggiano, for serving

The Ultimate recipe for pizza night

October is National Pizza Month, so I’m celebrating with this Artichoke & Olive Pan Pizza!

The dough is made with @colavitausa Extra Virgin Olive Oil for a golden, crispy crust. Instead of tomato sauce, I went with a creamy spinach béchamel, topped with Colavita artichoke hearts, Kalamata olives, mozzarella, and red onion. Finished with fresh basil and Parmigiano Reggiano!

From pastas and main dishes to desserts and a few unexpected twists on Italian classics, I’m so excited to finally share these recipes with you!

The book comes out in February, but it’s already available for preorder! Preorders make a big difference for a first cookbook because they help show bookstores there’s interest before it even hits the shelves. So if you’re planning to get a copy, ordering early really means a lot!

Creamy Chicken & Broccoli Penne
Ingredients:
1 pound (16 oz) Colavita Penne Rigate
2 tablespoons plus 1 teaspoon Colavita Classic Extra Virgin Olive Oil, plus more as needed
12oz boneless, skinless chicken breast, cut into bite-size pieces
1 teaspoon garlic powder
1 teaspoon Italian seasoning
¼ to ½ teaspoon freshly ground black pepper
1 small yellow onion, chopped
3-4 garlic cloves, minced
⅓ cup dry white wine or low-sodium chicken broth
1 cup (240 ml) heavy cream
10 oz (285 g) broccoli florets, cut into small, bite-size pieces
1 loosely packed cup fresh baby spinach
6-8 fresh basil leaves, torn
Zest of 1 lemon, optional
Reserved pasta water, as needed

For serving
Chopped fresh parsley, optional
Freshly ground black pepper
Colavita Classic Extra Virgin Olive Oil

Instructions:
1. Place the chicken in a medium bowl. Add the garlic powder, Italian seasoning, salt, black pepper, and 1 teaspoon olive oil. Toss until the chicken is evenly coated.
2. Bring a large pot of generously salted water to a boil. Add the penne and cook according to the package instructions until just shy of al dente. Before removing the pasta, reserve 1 cup of the pasta water. Using a spider strainer, transfer the pasta to a colander, leaving the boiling water in the pot. Add the broccoli to the same water and cook for 1 minute, until bright green and crisp-tender. Drain immediately and set aside.
3. Meanwhile, heat 2 tablespoons of olive oil in a large, deep skillet over medium-high heat. Add the chicken in a single layer and cook for 5 to 7 minutes, turning occasionally, until golden brown and cooked through. Work in batches if needed to avoid overcrowding the skillet. Transfer the chicken to a plate and set aside.
