I love brothy meals because you’re getting the comfort of soup without everything having to be soup. You can build them around protein, vegetables, herbs, spices, and a good broth, then eat the whole thing from a bowl with a spoon.

Tonight’s was brothy red curry chicken thighs with carrots + kale, and it was so simple.

Quick recipe:
Brown 4 chicken thighs in a little ghee or coconut oil. Add 1–2 tbsp red curry paste and let it cook for a minute, then add sliced carrots, about 2 cups chicken broth, and a splash of full-fat coconut milk. Nestle the chicken back in and gently simmer until cooked through and the carrots are tender. Stir in chopped kale for the last few minutes. Finish with lime and sea salt to taste.
You can make it even brothier by simply adding more chicken broth.
