It is too hot to spend the afternoon cooking over the stove and this was delicious, so refreshing and perfect for summer!

Everyone has been making these “Bottom of a Greek Salad,” originated by @foodbymaria because let’s be honest… you want to drink all those delicious juices at the end anyway!

When we recently discovered balsamic vinegar pearls @denigris1889usa and had been trying to figure out how and when to use them. Then I remember this concept and gave it an Italian twist!

For mine, I used black truffle burrata, Castelvetrano & Kalamata olives, tomatoes, parsley, fresh basil, salt, olive oil, and, then finished it all with the balsamic vinegar pearls.

You can really make this with anything you have on hand. Chop everything up small, toss it together, and you can’t go wrong. The creamy black truffle burrata with the fresh tomatoes, olives, herbs, and little bursts of balsamic makes this one seriously addictive dip.

Serve it with crusty bread, crackers, or just grab a spoon. No judgment here.

Steak Bites & Queso Dip w/Caramelized Onions

 #ad Creamy, smoky, cheesy, and topped with juicy grilled steak bites, this queso is packed with layers of flavor. Sweet caramelized onions, roasted vegetables, and a blend of melty cheeses make it the ultimate party dip, especially when served with @tostitos Mexican Street Corn Chips.

Ingredients:
• 3 oz each: cream cheese, Colby, sharp cheddar, Monterey Jack, Pepper Jack & Oaxaca, all cubed
• 1 cup (8 oz) evaporated milk
• 1 tbsp cornstarch
• ½ medium white onion, diced
• 1 Roma tomato, diced
• 1–2 jalapeños, diced
• 2–3 cloves garlic, minced
• 2 tsp olive oil
• 2 tsp butter
• ½ tsp: smoked paprika, ground cumin, black pepper & kosher salt
• 1 large yellow onion, thinly sliced
• 2 tsp: olive oil & butter
• 2 New York strip steaks, about 10–12 oz each
• ½ tsp: black pepper, smoked paprika, ground cumin & garlic powder
• Tostitos® Mexican Street Corn Chips
Instructions

1. Caramelize onions: Heat olive oil and butter over medium-low. Add yellow onion and salt; cook 25–35 min, stirring occasionally, until deeply golden and soft. Set aside.
2. Prep steak: Cut steaks into bite-sized pieces. Toss with salt, pepper, smoked paprika, cumin and garlic powder until evenly coated.
3. Grill steak: Grill steak bites over high heat until well-seared and cooked to desired doneness. Set aside.
4. Cook vegetables: In an oven-safe skillet, heat butter and olive oil over medium. Add white onion, tomato and jalapeños; cook 5–7 min until softened. Add garlic and cook 30–60 sec. Stir in paprika, cumin, pepper and salt.
5. Make queso: Reduce heat to low. Toss cubed cheeses with cornstarch. Add evaporated milk and cream cheese; stir until cream cheese melts. Add remaining cheeses gradually, stirring until smooth. Do not boil.
6. Bake: Transfer to a 350°F oven for 5–10 min, just until hot and bubbling.
7. Finish: Remove from oven and fold in half to two-thirds of the caramelized onions. Top with grilled steak bites and remaining onions.
8. Serve: Serve immediately with Tostitos® Mexican Street Corn Chips. If queso thickens, stir in a splash of warm milk or evaporated milk. #queso #quesodi
My brother and his family eat very clean, which is a great example for us so this was my take on meal prep for him and his family this week while they were in town visiting! 

Loaf Pan chicken is the ultimate meal prep flex, not to mention it makes the juiciest chicken ever. If you’ve never tried it, now’s the time. It couldn’t be easier to make, and made great lunches for us all week (the kids even took it to camp).

Loaf Pan Chicken: Chicken thighs tossed with olive oil, salt, pepper, garlic powder, onion powder, paprika, and oregano. Spray a loaf pan with oil, pack the chicken in, and bake at 450°F until the internal temperature reaches 170°F, about 45 minutes depending on your oven.

Sweet Potatoes: Toss with olive oil and salt. Roast at 425°F for about 20 minutes, cut side down.

Cauliflower & Cabbage: Slice thick, drizzle with olive oil, and season with salt, pepper, and garlic powder. Roast at 450°F, flip after about 10 minutes, then broil for extra char if desired. Finish with Parmesan and chives.

Simple Salad: Cucumbers, tomatoes, and red onion tossed with olive oil, red wine vinegar, salt, and pepper.
