For potatoes:
Cut in half, drizzle with oil, season with salt & pepper. Bake on 400 for 45 min

For taco meat:
Brown and drain 1lb lean ground beef. Season with chili powder, garlic powder, minced onion, cumin, oregano, and pepper. Then add in 1/3 cup of water. Cook on low for a few minutes.

For street corn topping:
Fire roasted corn, 4-5 tablespoons Greek yogurt, 2 tablespoons mayo, cilantro, chili powder, tahini seasoning, juice of 2 limes, 1/2 cup cotija cheese.
