Honey Oat Bars I made these oat bars years ago for a potluck and they have been a staple ever since. Move over granola bars-these sweet and salty squares are going to be your new nut-free lunchbox favourite! Ingredients: 1/2 cup coconut oil, melted and cooled 1/2 cup honey 1/2 tsp vanilla 1 egg 1 1/2 cups rolled oats 3/4 cup whole wheat flour 1/2 tsp baking powder 1/2 tsp cinnamon 2 tbsp hemp hearts/chia seeds/flaxmeal 1/4 cup pepitas or sunflower seeds 1/4 cup dried cranberries (or whatever dried fruit you like) Pinch salt Directions: Preheat oven to 350. In a large bowl, whisk coconut oil, honey, vanilla, and egg. To this mixture, add oats, flour, baking powder, cinnamon, hemp hearts, pepitas, and cranberries. Mix well. Pour into an 8x8 parchment paper covered baking dish. Sprinkle top with salt. Bake for 20-25 minutes, until edges start to brown. Remove, let cool, and cut into bars. You can freeze these for up to 3 months or pack them for lunches all week! If your kids don’t like pepitas or cranberries, switch it up with sunflower seeds, different dried fruit, or omit them completely. Enjoy! Happy back-to-school! Vanilla Cake

I forgot to take a video of me assembling this cake…but you can use whatever icing you like (or my white chocolate ganache-coming soon).

This cake is moist, slightly dense-and oh so satisfying. This is the vanilla cake of all vanilla cakes.

Ingredients:
4 cups flour
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 cup butter
2 cups sugar
2 tsp vanilla
4 eggs
2 cups buttermilk

Directions:

Preheat oven to 350°.

Grease 2 8- or 9-inch cake pans and line with parchment paper, or grease and line a 9 x 13 pan.

Cream together butter and sugar.

Add vanilla and mix.

Add eggs, one at a time, and blend well in between each addition.

In a separate bowl, add flour, baking powder, baking soda, and salt. Whisk together. Set aside.

Measure out your buttermilk. If you don’t have buttermilk, add vinegar or lemon juice to milk and allow to sit for five minutes.

Add 1/3 of the flour mixture to the cake batter and combine.

Add half of the buttermilk and mix.

Add another third of the flour mixture. Combine.

Add remaining buttermilk and mix.

Add remaining flour mixture and mix everything together.

Pour into greased pans. Bake for 35 to 40 minutes, until tops are golden brown. You can test by inserting a toothpick in the middle of the cake and it is done when it comes out clean.

Now is the fun part! Talk with icing, or ganache, and tons of fresh fruit!

This cake isn’t too sweet, so it’s perfect for any kind of topping you enjoy.

If you’re not ready to eat the cake right away, you can wrap it up and freeze it for up to three months. It’s always good to have cake on hand!
