My Challah Recipe

INGREDIENTS

1 1/2 cups water
5 large egg yolks
1 1/8 teaspoons salt
1/3 cup avocado oil
4 1/4 cups bread flour
1/2 cup light brown sugar
1 heaping TBSP active dry yeast
1 large egg, lightly beaten

DIRECTIONS

Place the water, egg yolks, and oil in the bread machine pan then top with flour, sugar, salt and yeast. Make sure the yeast isn’t touching the salt. Process the ingredients on the dough cycle.

Remove immediately when the machine beeps. Divide the dough in half as this recipe makes 2 challot (plural for challah). Divide each piece into four sections. Roll each section into a long strand. Braid the strands as shown in the video to make a round challah

Place on a silicone mat or parchment-lined baking sheet. Let the challot rise, covered, until it has doubled in size (30-90 minutes).

Preheat the oven to 350⁰F (175⁰C) and brush the challot with the beaten egg. Bake for 30 minutes then cool on a wire rack.

I’ve lived in NYC and with my last name, you KNOW I know a good bagel!! These are the BEST bagels I’ve had outside of NYC, HANDS DOWN! And the spreads may be the best I’ve had EVER! And they have vegan options that are VERY GOOD! Everything is made in house and made fresh throughout the day; never frozen, never shipped. 

They also have a great origin story born from COVID (just like me) and they started in Central Florida! And now, they have nearly 50 locally owned and operated franchises in 11 states and more to come! They didn’t set out to be a chain. They wanted to make a good bagel. Now, they do just that in several places at once!
