Hard Days - Easy Dinners Part 5/10 - Coconut Curry Beans and Chicken 😮‍💨 full recipe👇

Ingredients:
2 Chicken Breasts
Big Pinch Salt
Big Pinch Black Pepper 
1 T. Neutral Oil
1 Yellow Onion, diced
3 Cloves Garlic, minced
2 T. Tomato Paste
3 T. Curry Powder
2 Cans White Beans 
2 Cans Coconut milk
2 T. White Sugar
Salt as needed
Juice of 1 Lime
½ C. Scallion Greens

Method:
1. Heat a cast iron skillet over medium high heat.
2. Once hot, add some oil, and add your chicken. Sear on each side for about 5 minutes.
3. Continue cooking until the chicken hits 150 degrees internal.
4. Take the chicken out of the pan, and add in the onions, and a pinch of salt. Make sure to continue stirring so the onions don’t burn.
5. Once the onions are translucent, add in your tomato paste and curry powder. Stir for about a minute or until the onions have a dark red, almost burnt look to them.
6. Add in your garlic and cook for another minute.
7. Add in the beans, and cook, stirring often for about 5-7 minutes.
8. Add in your coconut milk, stir, and bring to a simmer. 9. Simmer for about 20 minutes. You can smash some of the beans to make it thicker as well.
10. Cut the heat, and add in the scallions and lime juice.
11. Serve on top of the chicken.
12. Enjoy!
Hard Days - Easy Dinners, part 4/10 - Cheddar Broccoli Orzo 😮‍💨 full recipe👇

Ingredients
1 C. Orzo
2 C. Water or chicken stock
1 Rotisserie Chicken
1 Yellow Onion, diced
1 Broccoli Crown, cut into small pieces
1 tsp. Garlic Powder
1 tsp. White Pepper
1 T. Bouillon
1 C. Sharp Cheddar Cheese, grated
½ C. Whole Milk
1 Rotisserie chicken, skin removed, and meat shredded

Method:
1. Heat a medium pot over medium heat. Once hot, add some olive oil.
2. Add in your broccoli, and sear for about 3-4 minutes, until you have a nice char. Add some salt as well.
3. Take the broccoli out, add some more oil, and add the onions. Saute the onions for 4-5 minutes, until soft. Add the garlic powder and white pepper. 
4. Add in the orzo. Toast for about 2-3 minutes, or until fragrant. Add in the water, bring to a simmer, and cover.
5. Cook the orzo for about 15 minutes.
6. Once the orzo is done, add in the cheddar milk. Mix until creamy, cut the heat, then add in the broccoli and chicken. And mix again. 
7. Finish with parsley, and enjoy!

Your favorite chicken seasoning

Yukon Gold potatoes, sliced
Olive oil

Greek yogurt
Chipotle peppers in adobo
HoneyRice Vinegar
Garlic

Caramel Apple Ice Cream 😮‍💨 full recipe👇

Ingredients:
300ml. Heavy Cream
300 ml. Whole Milk
5 Egg yolks
120 G. White Sugar
1 Cinnamon Stick
5 Cardamom Pods
1 T. Vanilla Extract

Caramel Apple:
2 Apples, peeled and diced
120 g. White Sugar
4 T. Butter

Method:
1. Heat your heavy cream, milk, cardamom, and cinnamon over medium heat, just until steaming.
2. While waiting, add your egg yolks, sugar, and vanilla to a bowl, and whisk until smooth. Slowly add in a few ladles full of the milk to temper the eggs. Then add the eggs and milk back into the pan over low heat to make a custard
3. Continue to stir and heat the custard until it hits about 180 degrees fahrenheit. Then cut the heat, and strain the custard into a bowl. Let it cool, then place in a container, and place the container in the fridge to chill for at least 4 hours.
4. Peel and dice up your apples.
5. Add your sugar in a pan over medium heat. DO NOT TOUCH IT until it is mostly melted and a deep amber color.
6. Once it is, add your butter and stir until malted and incorporated. 
7. Add in your apples, and stir to coat.
8. Let the apples simmer, stirring occasionally, until most of the moisture has evaporated.
9. Pour the apples into a bowl, then strain most of the caramel into a separate bowl. Let both cool.
10. Once the custard has chilled, add it to your ice cream machine, and churn for about 30 minutes. During the last 5 minutes, add in your apples. During the last minute, add the caramel. If you need to lightly heat up your caramel to make it pourable, you can do that.
11. Add the ice cream to a freezer safe container, and freeze until ready to enjoy!!
12. You may need to take it out 10 minutes before serving to soften up.
13. Enjoy!
