These zucchini fritters have crispy edges, tender centers, and is the perfect way to use up the last of your summer zucchini!

These have been a family favorite in our house this summer and are a staple all summer long. Golden and crisp on the outside, soft in the middle, and packed with fresh zucchini flavor. So simple to make, and such a good way to use up whatever’s left in your garden before summer winds down.

Save this one, you’ll want to make these on repeat!

**ZUCCHINI FRITTERS** (gluten-free friendly!)

Zucchini:
🔸 2 medium zucchini, shredded (~4 cups)
🔸 1 tsp salt

Batter:
🔸 1 large egg
🔸 handful chives, chopped
🔸 1/4 cup parmesan, grated
🔸 2-3 garlic cloves, minced
🔸 1/2 cup flour (I used @kingarthurbaking 1:1 gluten-free)
🔸 1/2 tsp baking powder
🔸 1/2 tsp pepper
🔸 1 tsp all purpose seasoning
🔸 2 tbsp olive oil

For serving (optional):
🔸 Yogurt or sour cream (bonus: mix in chopped green onions/chives!)

Instructions:
1️⃣ Grate zucchini with a box grater or food processor.
2️⃣ Place in a bowl, sprinkle with salt, mix, and let sit 10 minutes.
3️⃣ Squeeze out excess water with your hands or a tea towel.
4️⃣ Add remaining ingredients to the zucchini bowl and mix to combine.
5️⃣ Heat 2 tbsp oil in a nonstick, heavy-bottomed pan (cast iron preferred) over medium-high heat. Drop in 1/4 cup batter and flatten lightly with a spatula.
6️⃣ Cook 3-4 minutes until golden brown, flip, and cook another 3 minutes.
7️⃣ Repeat with remaining batter, if needed.
8️⃣ Serve immediately with a dollop of yogurt and extra chives 🙌

💡 Tip: Batter consistency is key! Too runny? Add a touch more flour. Too thick? A splash of water. It all depends on how much moisture is left in your zucchini.

🥒 END OF SUMMER GARDEN HAUL = SPICY REFRIGERATOR PICKLES

Summer’s winding down but our garden veggies are still going strong! This spicy refrigerator pickle recipe is my go-to for using up all those cucumbers as it’s easy, no canning required, and SO good.

Make a batch (or two) and keep them in the fridge for snacking all week long.

📝 SAVE THIS RECIPE:

Ingredients:
1 cup fresh dill (or a big handful)
3-4 cloves garlic, chopped
1 tbsp crushed red pepper flakes (adjust to your heat preference!)
1/4 cup chopped onion
3 cups sliced small cucumbers
1 1/2 cups water
3/4 cup white vinegar
1 tbsp granulated sugar (or honey)
1 tbsp kosher salt
1/8 tsp black pepper

Instructions:
1️⃣ In a jar, layer the dill, garlic, red pepper flakes, and onion. Top with cucumbers.
2️⃣ In a medium pan, combine the remaining ingredients and bring to a boil until sugar and salt dissolve. Remove from heat and let cool for 15 minutes.
3️⃣ Pour the liquid into the jar, seal, and refrigerate for at least 12 hours.
4️⃣ Enjoy! Pickles keep in the fridge for 2-3 weeks. 🙌
This sausage & veggie foil pack is the easiest campfire dinner you’ll make all season! 

Our family spend a few nights at @jellystoneparkatcolumbusnorth and let me tell you that having a full kitchen in our cabin for prep (hi, running water and counter space 👋) made this SO easy. But don’t worry, hardcore tent campers, this one’s for you too (and they have lots of spots for you too). Prep it all at home, toss it in a cooler, and you’re 20 minutes from dinner over the coals.

🥘 What you need:

Sausage + whatever veggies are in season (we used peppers, onions, potatoes & zucchini) + your favorite seasoning.

Chop it, wrap it in foil (make sure to fold and seal edges well and use heavy duty foil), toss it straight on the hot coals. Cook about 8-10 minutes each side (flip once). No pans, no stress, no mess.
