Almond Pulp Scrap Crackers
1 Cup Almond Pulp
Skins of 1 Cup Almonds
2 Tbs Flax Seeds
2 Tbs Chia Seeds
2 Tbs Thyme

Blend all ingredients into a grainy dough that holds its shape when you squeeze a handful. Transfer onto a lined dehydrator or baking sheet and either dehydrate at 130° for 8 hours or bake at 350° for 30 minutes, flipping halfway through.

Almond Milk
6 Cups Water, Divided
1 Cup Raw Almonds
Pinch of Salt

Soak almonds in 2 cups of water overnight. Drain, then remove the skins. Combine skinless almonds, remaining water, and salt in a blender and blend until texture is like wet sand. Strain and enjoy for about 5 days in the fridge!

With peach season in full swing, and my canning shelves filling up with all kinds of peach recipes, I tend to have a lot of peach scraps on hand!

And while I know I can just throw them into the compost bin, you know I love to waste as little as possible, so let’s make a peach scrap syrup from the offcuts, pits, and skins of peaches we’re prepping!

Prepping Peaches

For most canning recipes you need to remove the peach skin. The easiest way to do this is to remove the stem and then to score a shallow X in the bottom of the peach. Drop the scored peaches one at a time into a pot of boiling water until the base of the pot is full and blanch the peaches for thirty seconds. Remove using a slotted spoon and drop them into an ice bath to stop the cooking process and shock the skin into wanting to easily peel off!

Depending on the recipe you’re using your peaches for, you can either use your fingers to dig the peach pit out or use a knife. Either way, save the pits too.

Peach Scrap Syrup Method

Ingredients: Peach Scrap Liquid, Sugar, Lemon Juice

You’ll take all of the peach scraps that you’ve saved and pop them into a heavy-bottomed saucepan. Cover the scraps with water. We will turn on the heat to medium low and just let simmer, let this simmer for at least thirty minutes. Let the peach scraps cool and then, working in batches, pour into a sieve and use a spatula to press the peach scraps so they release their liquid. 

Measure the amount of liquid you’ve gathered, pour the liquid back into the (cleaned) saucepan, and then add the same volume of sugar to the pan. For each cup of liquid gathered I add in a teaspoon of lemon juice.

Bring this to a boil, stir until the sugar is dissolved, and let simmer until it is the thickness that you’d like.

Just store it in an airtight container in the fridge for up to a month. Freeze for up to six months, or water bath can with 1/2” headspace for 15 minutes. (See accompanying blog post for detailed instructions, with notes about pH, etc.)

Well, this wasn’t what I had been expecting to post today! Canning shelf fail!

This is finally the push I needed to swap my bookshelves for *actual* canning shelves- seven years of constant jars apparently was just too much for these IKEA shelves! 

Shout out to @ballcanning jars because not a SINGLE one of these jars broke!! (Not spon, but you know I love working with them!)

Have a shelf recommendation? Here’s what I’m looking for!

- Sturdy shelves with adjustable heights! I use a bunch of different types of jars and containers, as quite a few of these shelves serve as my bulk pantry. I refill the beans, powders, and dried goods often.
- Shelves that can handle weight near the front of the shelf. I usually make multiple batches of things and when I use the jars up, I’ll pull the full jar forward so I can see what I have easily. 
- I’m not the biggest fan of just metal steel shelves, aka why these were white. So if the new shelves have a coating that makes them look less industrial- bonus!!

Little FYI: Ball’s SureTight lids (if correctly used) allow canned foods to stay good for up to 18 months. So having leftovers from last year is perfectly safe!
