my secret poopmaxxer pesto recipe!

SHOUTOUT TO @America's Test Kitchen Channel for teaching me that blanching your peas keeps them bright green and keeps away bitterness

4 servings / 9g protein / 5g fiber / roughly 200cal per serving

2 cups sweet peas
1 cup basil
1/2 cup grated pecorino cheese
1/3 cup olive oil
2 cloves garlic
1/4 cup over-toasted walnuts
juice of 1/2 huge lemon
1/2 tsp salt

- blanch the peas in salted water for 2 minutes and transfer to an ice bath to let them cool
- if you have roasted walnuts, i find that adding EVEN MORE toastiness to the walnuts REALLY brings out the flavor so i throw them on the pan for like 5 minutes (this is totally optional)
- puree everything except the peas together
add some peas, puree, add some more peas, puree until you are satisfied with the amount of peas for health and slight sweetness without it tasting like ass (i RnD's this 3 times and found that 2 cups is perfect)
