🦋Butterfly Pea Flower Lemon Fizz💙

Ingredients

* 1-2 teaspoons dried butterfly pea flowers (Aparajita) or 1 butterfly pea tea bag
* 1 cup hot water
* Juice of ½ lemon (or to taste)
* Club soda or Sprite
* Ice
* Lemon slices and mint, for garnish (optional)

Instructions

1. Steep the butterfly pea flowers in hot water for 5-7 minutes.
2. Strain and let the tea cool completely.
3. Fill a glass with ice and pour in the cooled tea.
4. Add the fresh lemon juice and watch the tea magically change from blue to purple.
5. Top with club soda for a refreshing drink or Sprite for a sweeter version.
6. Garnish with lemon slices and fresh mint, if desired.

RAJMA CURRY (Red kidney beans curry). 

Bursting with flavor, plant protein and fiber, this simple dish is so delicious. Pair with rice or roti. EASY for beginners. ✅You can omit the hung and fenugreek leaves if you’re a beginner But Indian food cook!

✅Ingredients
-1 cup Rajma soaked overnight and boiled. For convenience, I used @fielddayproducts canned red kidney beans. 
-1 onion finely chopped
-1 big tomato chopped
-1 teaspoon cumin seeds
-1 teaspoon hing ( asafetida)
-1 tablespoon minced garlic 
-1 tablespoon minced ginger
-1 teaspoon turmeric powder
-1 tablespoon coriander powder
-1 teaspoon cumin powder
-1 teaspoon chili powder
-1 teaspoon garam masala
2-3 green chilies chopped
-2 tablespoons Kasuri Methi (dried fenugreek leaves)
-1/2 bunched cilantro, chopped 
-2 tablespoons neutral cooking oil 

✅Instructions
1️⃣ Heat oil and add the cumin seeds and hing in a wide deep pan and saute for 1 minute. 
2️⃣Add onions, green chilies, ginger and garlic and saute on medium heat for 2-3 minutes. 
3️⃣Add the tomato and cook until the tomato is pulpy. Then add turmeric, cumin, coriander and garam masala. Mix well and saute for 2 minutes on medium. 
4️⃣Add the red kidney beans, salt and 2 cups water. Bring to a boil, then cover and cook for 5 minutes on low. Open cover, add fenugreek leaves, mix and then garnish with cilantro. You can add a pat of butter too at this point if not vegan or vegan butter. Enjoy!😃

✅Chaat is a popular Indian street food that’s all about bold flavors and contrasting textures. It usually combines sweet, tangy, spicy, salty, and crunchy elements in every bite. While many chaats are savory, fruit chaats are just as delicious, especially during the summer!

This strawberry version is fresh, vibrant, and incredibly easy to make. Juicy strawberries are tossed with red onion, cilantro, green chilies, fresh lemon juice, a few simple seasonings, and topped with crispy boondi for the perfect crunch.

❤️🍓One of my favorite things is showing that Indian-inspired recipes don’t have to be complicated. Sometimes it’s as simple as taking fresh fruit and adding a few pantry ingredients to create something completely unexpected.

🍓 Strawberry Chaat

Ingredients
🍓 2 cups strawberries, sliced or quartered
🧅 ¼ cup finely diced red onion
🌶️ 1–2 green chilies, finely chopped (optional)
🌿 2 tablespoons chopped cilantro
🍋 Juice of ½–1 lemon
🧂 Salt, to taste
🥄 Pinch of sugar (optional)
🌶️ Pinch of black pepper
✨ Pinch of chaat masala (optional but recommended)
💛 Handful of boondi for crunch

Directions
Combine the strawberries, onion, chilies, and cilantro in a bowl. Add the lemon juice, salt, pepper, sugar, and chaat masala. Toss gently until everything is coated. Just before serving, sprinkle the boondi on top so it stays crisp. Enjoy immediately!
