Sheet Pan Breakfast Quesadillas🧀🥚

Easy, protein-packed, and perfect for prepping ahead for busy mornings!

Ingredients👇
8 La Banderita burrito-size flour tortillas
10 large eggs
1 cup Nancy’s low-fat cottage cheese with a splash of whole milk, blended
- cottage cheese is optional, I just love how this helps the texture of the eggs
8 Trader Joe’s Chicken Breakfast Sausage Patties, diced
½ medium onion, diced
1 red bell pepper, diced
½ cup Trader Joe’s Extra-Sharp Cheddar, freshly shredded
½ cup Trader Joe’s Monterey Jack, shredded
Salt + pepper, to taste
Optional: garlic powder, smoked paprika + red pepper flakes

Directions👇
• Mix together eggs, cottage cheese, veggies, sausage patties, and seasonings in a large bowl.
• Cook the egg mixture in a parchment paper lined pan, I baked at 400°F for 15 minutes. Let cool slightly. 
• Spray another sheet pan with cooking oil of your choice and arrange the tortillas on a sheet pan, overlapping them and leaving enough hanging over the edges to fold over the filling.
• Add cooked egg mixture and top with shredded cheese.
• Place 2 additional tortillas in the middle and fold the bottom tortillas over the filling to completely cover the top. Spray the top with cooking spray.
• Place a second sheet pan on top to help everything stay compact and get crispy.
• Bake at 400°F for 15–20 minutes. Remove the top sheet pan and bake for another few minutes, if needed, until golden + crispy.
• Let cool, slice into 6-8 pieces.
• Before wrapping in foil or paper, make sure this cools completely so that moisture does not build!
• Store leftovers in the fridge for an easy grab-and-go breakfast throughout the week.

KEBAB FILLING
• 1 lb 93/7 ground chicken
• 1 tbsp fresh parsley, chopped
• 1 tbsp fresh dill, chopped
• 1 tbsp fresh chives, chopped
• 1 tsp garlic powder
• 1 tsp onion powder
• 2–3 tsp @franksredhot Original RedHot
• Salt + pepper to taste

FOR ASSEMBLY
• 5 large burrito tortillas, edges trimmed to create squares, I used @guerrerotortillas 
• 1⅓ cups @traderjoes Lite Shredded Mozzarella
• ⅓ cup Frank’s RedHot
• ½ stick Kerrygold salted butter, melted

HOW TO MAKE THEM
- Preheat oven to 425°F. Mix all of the kebab filling ingredients together in a bowl.
- Layer 4 tortillas, adding ¼ of the chicken mixture + ⅓ cup mozzarella between each layer. Finish with the fifth tortilla on top.
- Slice the stack into 3 equal strips. Rotate each strip so the layers are facing up.
- Pierce each strip with 3 skewers, then cut between the skewers to create individual kebabs.
- Bake for 20–25 minutes, rotating every 5–6 minutes. Each time you rotate, brush the side facing up with melted butter so every side gets its turn to crisp up.
- Once the chicken is fully cooked, brush with additional hot sauce. For extra crispy edges, broil for another 2–3 minutes. 🔥
- Top with ranch or blue cheese + fresh chives and DIG IN
