Today we're making homemade chicken nuggets using @forceofnaturemeats ancestral blend ground chicken. These nuggets require no deep frying or added oil and are super juicy, tender, and nutritious thanks to the heart and liver blended right into the ground chicken.

It can sometimes be hard to get used to the idea of eating organ meats but Levi absolutely loved these nuggets and said he didn't taste anything but chicken.

Ancestral Blend Chicken Nuggets

Makes around 20 nuggets
Prep time: 20 minutes
Cook time: 15 minutes 

For the nugget mix

1 lb Force of Nature Ancestral Blend Ground Chicken
1 teaspoon kosher salt
1 1/2 teaspoon granulated garlic 
1 teaspoon onion powder
1/4 teaspoon ground cumin
1/2 teaspoon ground paprika

For the breading

2 large eggs
1 tablespoon mayo
2 tablespoons milk
2 cups of unseasoned breadcrumbs, panko, or crackers of your choice

Pre-heat the oven to 400F and line a baking tray with parchment paper.

In a large mixing bowl, combine the ground chicken, salt, granulated garlic, onion powder, ground cumin, and ground paprika. Using a large fork mix all the seasonings into the meat until thoroughly combined.

Fill a small bowl with cold water to wet your hands to prevent the chicken  from sticking when forming the nuggets.

Grab about a golf ball sized amount of chicken gently form it into a ball, then place it down on the parchment lined baking sheet and lightly press down on it to flatten it into a nugget shape. Repeat with the rest of the chicken leaving an inch of space in between each one. Pop the tray into the freezer for 15 minutes, this will stiffen the nuggets up, making them easier to bread.

While you wait, in a medium bowl, whisk together the eggs, mayo, and milk until fully combined. Set aside.

In a food processor, add the crackers, if using, and blend until a fine bread crumb-like consistency. Transfer to a wide dish.

Prepare another baking tray with a wire rack.

Bread the cold nuggets by dipping it in the egg mixture, then coating it in the breading. Make sure to keep one hand wet and one dry. Place the nuggets on the wire rack with at least an inch of space in between.

Bake for 15 minutes on the top rack.
