Sunday White Rice & Seafood Spinach 

Ingredients

Fish & Shrimp

* 1 large red snapper
* 1.5 lbs deshelled shrimp, tail-on
* All-purpose seafood seasoning
* Bouillon powder and salt, to taste
* Olive oil

Spinach Sauce

* 3 lbs Chinese spinach / loose-leaf spinach
* ½ cup palm oil
* 3–4 scotch bonnet peppers, adjust to tolerance
* 2 long red peppers
* 5 red bell peppers
* 1 large onion
* 1 tbsp locust beans (iru)
* 3 tbsp crushed crayfish powder
* Cow tripe and cow foot chunks (optional)
* 1 tbsp bouillon powder
* ½ tsp salt

Directions

Season the fish and shrimp separately with seafood seasoning, bouillon powder and salt. Drizzle the red snapper with olive oil and air-fry until golden and cooked through.

Roughly blend the peppers and onion. Heat the palm oil and fry the shrimp on both sides for 2–3 minutes, then remove and set aside.

In the same palm oil, cook the blended pepper mixture and locust beans until reduced. Add the blanched and drained spinach, bouillon powder, salt and optional cooked tripe/cow foot. Cook for 7–10 minutes, then stir in the crushed crayfish powder.

Return the shrimp to the sauce, gently combine, and serve with white rice..

Ingredients

For the Fish

* 1 whole mackerel, seasoned, roasted, and deboned

For the Bean Batter

* 2 cups peeled honey beans
* 2 medium onions
* 4 Scotch bonnet peppers
* 3 large red bell peppers
* 2 slim red chili (cayenne) peppers (mild/non-spicy)
* 2 large carrots
* Fish head (for blending with the batter, optional for extra flavor)
* 2 tablespoons bouillon powder, dissolved in hot water
* ¾ cup vegetable oil
* 2 tablespoons crayfish powder
* Roasted mackerel, flaked

Fillings
* Boiled eggs, halved or sliced

Instructions

1. Blend the peeled honey beans with the onions, bell peppers, Scotch bonnet peppers, mild red chilies, carrots, and fish head until very smooth.
2. Transfer the batter to a large bowl. Stir in the dissolved bouillon, vegetable oil, and crayfish powder. Mix until well combined and season to taste if needed.
3. Fold in the flaked roasted mackerel.
4. Pour the batter into your preferred moi-moi containers or leaves. Add a piece of boiled egg to each serving.
5. Steam for 45–60 minutes, or until the moi-moi is firm and cooked through. The cooking time will vary depending on the size of your containers.
6. Allow to cool slightly before serving.
