I LOVE beans, and I want you to love them too- I want to show you how to make beans a staple at your house and in your daily diet.

Having been a vegetarian for over 2 decades, I have found ways to utilize beans in every meal. I make fresh beans a couple times a week in the instant pot so we’re always prepared. (we also have plenty of canned beans in the pantry for backup)

If you don’t think you like kale, or don’t know what to do with it, try this! Really you can use any big leafy green- collards, Swiss chard, etc, just remember that the darker the green the more nutrient dense.

Dark leafy greens are so good for you, loaded with fiber, vitamins, minerals, and antioxidants. But the secret is cooking them in a way that makes you actually want to eat them.

*Also wash them well to get off gritty dirt or caterpillars 🤢

I use about 6 leaves per serving. Like spinach, they get significantly smaller when cooked. This part is optional, but I like to saute a little bit of onion and garlic before adding my kale. 

Starting with a bit of flavorful olive oil, I love @wearebrightland, heat the oil over a low medium heat. After washing your greens, you can cut the stems out or just rip it depending on your personality.After all of the greens are in your pan, add some salt and stir them a bit. As they begin to wilt add a drizzle of sesame oil and a generous squeeze of lemon juice. Nothing measured, but a little goes a long way. 

All in all this takes about 8minutes. 

Plate your greens with delicious @momofukugoods garlic chili oil- spicy or plain. And a sprinkle of pepitas. 

Optional but always a good idea, serve with a spoonful of fresh beans.

I live in Central Kentucky and it’s heartbreaking watching all of these farms being turned into big grocery stores or shopping centers. I have nothing against big grocery stores, but we have them every half-mile, we are not lacking.
