Mandrake Chia Seed Pudding Cups #MadeWithLifeway 🌱🪴 #lifewaypartner whimsical desserts can be made healthier thanks to @lifewaykefir and these little chia pudding cups are  just as delicious as they are cute!
Makes 2 servings
Ingredients
Chocolate Chia Pudding
• 1 cup (240 ml) Lifeway Kefir
• ¼ cup (40 g) chia seeds
• 3 tbsp (15 g) unsweetened cocoa powder
• 3 tbsp (45 g) honey
• 1 tsp vanilla extract
• A pinch of salt
For the Mandrakes
• Modeling chocolate, tinted golden brown/tan
• Fresh mint sprigs
For the “Soil”
• 4–6 chocolate sandwich cookies, finely crushed
Directions
Make the pudding: Whisk together the kefir, cocoa powder, honey, vanilla and salt until smooth. Stir in the chia seeds until evenly combined. Let sit for 10 minutes, stir again, then cover and refrigerate for at least 4 hours or overnight, until thick.
Shape the Mandrakes: Shape the modeling chocolate into small, tapered root-like bodies. Make cuts along the bottom and sides, then gently pull and twist the pieces to form little arms and legs.
Add the details: Use a toothpick to poke and shape little eyes and mouths into each Mandrake. Make a small opening in the top and insert a fresh mint sprig for the leaves. (I would add the mint at the very end right before serving since they tend to wilt the longer they sit out)
Assemble: Divide the chocolate chia pudding between two cups. Top generously with crushed chocolate cookies to resemble soil, then nestle a Mandrake into each cup.

FILM TO TABLE SERIES EP 60: Cress Soup from The Witches (1990) 🧙‍♀️🐭

Ingredients (adapted from Julia Child’s potage au cresson recipe)

* 2 Tbsp unsalted butter
* 1 lb (454 g) leeks — about 3 cups sliced, white + pale green parts
* 1 lb (454 g) Yukon Gold potatoes — about 4 medium, peeled and diced
* 5 cups low-sodium chicken stock
* 1 small bay leaf
* 1 tsp fine sea salt, plus more to taste
* 3 oz (85 g) fresh watercress, thick stems removed
* ½ cup (120 ml) heavy cream
* pepper, to taste

Instructions

1. Sweat the leeks. Melt the butter in the Dutch oven over medium-low heat. Add the washed and sliced leeks with a small pinch of the salt. Cook for 8–10 minutes, stirring occasionally, until very soft and sweet. Don’t let them brown—we want to keep the soup pale.
2. Add the potatoes, chicken stock, bay leaf and remaining salt. Bring just to a boil, then reduce to a gentle simmer. Partially cover and cook for 30–35 minutes, until the potatoes are completely tender.
3. Add the cress. Remove the bay leaf. Add 3 oz watercress and simmer for just 5 minutes.
4. Blend until silky. Blend until completely smooth. 
5. Strain. Pass the soup through a fine-mesh sieve back into the Dutch oven.
6. Place over low heat and stir in heavy cream. Don’t bring it to a hard boil.
7. Season with more salt as needed and more pepper to taste
