Ingredients list —
1 bag of 90/10 ground beef
1 package silken tofu (honestly could’ve added half or one more block, and this would’ve added more protein too 4 eggs
Water (50% of egg volume)
Chopped green onions, garlic, and ginger
Doubanjiang, Oyster sauce, Shaoxing wine, soy sauce, sichuan pepper, white pepper
1 cup chicken bone broth
Cornstarch slurry

1. Whisk the eggs until fully beaten. Add water equal to 50% of the egg volume and skim off any bubbles from the surface.
2. Transfer to a heat-safe bowl and steam over very low heat for 10-11 minutes. If you don’t have a steamer, place a bowl on top of a plate inside a covered pot.
3. While the eggs steam, sauté the green onions, garlic, and ginger for 1-2 minutes until fragrant.
4. Add the ground beef and break it up into very small pieces to maximize surface area. Cook until browned and caramelized.
5. Add the doubanjiang and oyster sauce and fry for 1 minute.
6. Deglaze with the Shaoxing wine, then add a bit of soy sauce, Sichuan pepper (I like adding a lot since I love spice), and white pepper.
7. Pour in the chicken or beef bone broth and bring to a gentle simmer.
8. Stir in the cornstarch slurry and cook until slightly thickened.
9. Gently add the tofu and let it braise on low heat for 3-5 minutes so it absorbs the flavor.
10. Pour the mapo tofu over the steamed eggs and serve immediately with rice.

Made miso Chilean sea bass with miso soup for the perfect healthy & nutritious dinner 🤍

For the miso Chilean sea bass:

Miso marinade

* 7 oz white miso
* 3 oz sake
* 3 oz mirin
* 1 oz sugar

Add the sake and mirin to a small pot and let it simmer for a few minutes. Stir in the sugar until dissolved, then add the white miso and mix until everything is smooth and combined.

Let the marinade cool completely before coating the Chilean sea bass. I let mine marinate overnight so it really soaks up all that flavor!

When you’re ready to cook, remove some of the excess marinade and bake at 400°F for around 10 minutes, depending on the thickness of your fish. Finish under the broiler for 1–2 minutes if you want that extra caramelized top ✨

Paired it with a warm bowl of miso soup for such an easy, comforting, nutrient-packed dinner.

hot soba bowl with pork belly & mushrooms 🍜

this was actually a clean-out-the-fridge kind of meal and it turned out sooo good

started with a dashi broth using dashi packets from Dashi Okume, then added some leftover chashu broth I had frozen from when I made chashu last month. if you don’t have chashu broth, a good substitute would be 2 parts soy sauce + 1 part mirin, added to taste.

added shimeji + enoki mushrooms and let everything simmer together.

cooked the soba separately, then added it to the bowl with the mushroom broth and leftover pork belly on top.
