The pasta you need for Thanksgiving 🍂🧡

This creamy pumpkin pasta bake is cheesy, comforting and perfect for the season! Made with roasted pumpkin, a creamy white sauce and lots of melted cheese, all baked to perfection in the @smegcanada Combi Steam Oven. Save this recipe for your next cozy dinner.

Ingredients:
500 g pumpkin (about 3½ cups cubed)
2 garlic cloves
1 tbsp olive oil
Rosemary, to taste
Paprika, to taste
Salt and pepper, to taste
600 g pasta (about 1 lb 5 oz)
200 g mozzarella or provolone (about 1¾ cups shredded)
100 g cheddar cheese (about 1 cup shredded)
30 g Parmigiano Reggiano (about ⅓ cup grated)

For the béchamel sauce:
600 ml milk (2½ cups)
60 g butter (4 tbsp)
60 g all-purpose flour (½ cup)
Salt and pepper, to taste
Nutmeg, to taste

Instructions:
1. Cut the pumpkin into cubes and place them in a baking dish with the garlic, paprika, salt, pepper, rosemary and a drizzle of olive oil.
2. Roast until tender and golden. I used the Mixed Roasted Vegetables setting on the Smeg Combi Steam Oven.
3. Meanwhile, melt the butter in a saucepan over medium heat. Add the flour and stir for about a minute. Gradually pour in the milk, whisking continuously until the sauce thickens. Season with salt and nutmeg.
4. Once the pumpkin is roasted, blend it with the béchamel until smooth and creamy.
5. Cook the pasta in salted boiling water for half of the recommended cooking time, then drain.
6. Mix the pasta with the pumpkin sauce until evenly coated.
7. Transfer half of the pasta to a baking dish and add some of the mozzarella or provolone and cheddar. Add the remaining pasta and top with the remaining cheese and grated Parmigiano Reggiano.
8. Bake until the cheese is melted and the top is golden and crispy. I used the Pasta Bake setting on the Smeg Combi Steam Oven and selected a cooking time of 20 minutes for a creamy centre and a perfectly golden top.
9. Let it rest for a few minutes before serving. Buon appetito! ❤️

These little carrot fritters are such an easy way to make something delicious with just a few simple ingredients! They're crispy on the outside, soft on the inside, and you can even add a little fresh mint for extra flavour. 😍

Ingredients:
200 g carrots (about 1½ cups grated)
1 egg
50 g chickpea flour (⅓ cup + 1 tbsp)
20 g Parmigiano Reggiano (about ¼ cup grated)
2 spring onions, finely chopped
Salt and pepper, to taste
A few fresh mint leaves, optional
Oil, for frying

Instructions:
1. Grate the carrots and place them in a bowl.
2. Finely chop the spring onions and add them to the carrots along with the egg, chickpea flour, grated Parmigiano, salt, and pepper. Add a few chopped mint leaves if desired.
3. Mix everything until well combined. If the mixture seems too wet, add a little more chickpea flour.
4. Heat some be vegetable oil (I used Sunflower Oil) in a pan over medium heat.
5. Scoop small portions of the mixture and flatten them into thin patties.
6. Cook for about 3–4 minutes until golden and crispy and cooked through. Work in batches if needed.
7. Serve warm and enjoy!

Transforming a pear into delicious fritters. 🍐

Ingredients:
1 pear
125 g flour (1 cup)
65 g yogurt (1/4 cup)
60 g sugar (1/3 cup)
1/2 tsp baking powder
Lemon zest

Instructions:
1. Grate a pear into a bowl and add lemon zest, sugar, yogurt, flour, and baking powder.
2. Mix the ingredients until well combined to form a thick batter.
3. If the batter is too liquid due to varying juiciness of pears, add a bit more flour until the desired consistency is reached.
4. Heat oil in a frying pan or deep fryer over medium heat.
5. Take spoonfuls of the batter and carefully drop them into the hot oil.
6. Fry the fritters for 2-3 minutes on each side until golden brown.
7. Remove the fritters from the oil and drain them on paper towels to remove excess oil.
8. While still warm, coat the fritters generously with granulated sugar.
9. Serve the pear fritters warm as a delicious snack or dessert.

Enjoy✨

This is one of those super simple sauces that tastes like you put way more effort into it than you actually did 😍 The roasted cherry tomatoes make it naturally sweet and so good with spaghetti!

Ingredients:
600 g cherry tomatoes (about 4 cups)
2 garlic cloves
fresh basil
30 ml olive oil (2 tbsp)
¾ tsp salt, or to taste

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Add the cherry tomatoes, garlic, basil, olive oil, and salt to a baking dish. Mix everything together.
3. Bake for about 25 minutes, or until the tomatoes are very soft and juicy.
4. Transfer everything to a blender and blend until smooth.
5. Pass the sauce through a fine-mesh sieve to remove the tomato skins and seeds, creating a super silky sauce.
6. Cook the spaghetti according to the package directions, reserving a little pasta water.
7. Toss the spaghetti with the tomato sauce, adding a splash of pasta water if needed.
8. Serve with fresh basil and parmigiano if you like and enjoy! ❤️
