You might be familiar with Hawaiian shave ice, but did you know that Mexico has its own version?

Raspados has a more coarsely textured ice that’s really fun to crunch on, and the syrup toppings are really thick and sometimes have pieces of fruit in them.

I was just in Mexico with @volcántequila learning all about their tequila and we stayed in the family home, Hacienda La Gavilana.

We were welcomed with these delightful frozen treats, which of course had a splash of tequila in them. Sipping them under the Jalisco sun with a view of the volcano was perfection.

I was recently on the Big Island of Hawaii and I visited @kuleanarumworks who is making some fantastic rum agricole and rum blends. I took a tour of their farm so I could show you the process of making this rum.

The style of rum is made with fresh sugarcane juice as opposed to molasses, so it has a very fresh and vibrant flavor to it which makes it one of my favorite styles of rum.

It’s a lot of work to make this rum, after being harvested the sugarcane must be trimmed by hand to remove parts which would make the juice bitter.

The cane is then fed by hand into a powerful roller to extract the juice.

This juice is then trucked over to their distillery where it is fermented before finally being distilled into rum.

When you find yourself on the Big Island I highly recommend visiting the Kuleana Rum Shack to have a rum flight and a Mai Tai
