Ingredients: 

220g firm tofu
1 aubergine
2 tbsp vegetable oil
2 tbsp miso paste
2 tbsp soy sauce
1 tbsp white vinegar
1 ½ vegetable stock
1 tsp coconut  sugar
1 thumb finely grated ginger
3 garlic cloves, finely grated
1 scotch bonnet 
Salt 
Chilli oil (optional)
Tofu and miso aubergine 🤌🏿

220g firm tofu
1 aubergine
2 tbsp vegetable oil
2 tbsp miso paste
2 tbsp soy sauce
1 tbsp white vinegar
1 ½ vegetable stock
1 tsp coconut  sugar
1 thumb finely grated ginger
3 garlic cloves, finely grated
1 scotch bonnet 
Salt 
Chilli oil (optional)

Yam & ackee 🌱 

1 yam 
1 large can ackee 
1 bell pepper 
1 large white onion
3 cloves of garlic 
1 scotch bonnet
1 sheet of nori 
1 tbsp curry powder
2 tomatoes 
1 tbsp turmeric 
1 tbsp smoked paprika 
1 tsp kala namak 
Handful of parsley

Method: 

Slice the yam into disks, I steamed mine with salt but you can also boil too. 

Add the onion, garlic, scotch bonnet into a pain with some oil and  cook down. Add tomatoes and nori followed by the ackee and seasoning. Try not to break and mash the ackee too much and fold rather than mix. 

I served mine with plantain and avocado.
