Let’s make Moelleux au Chocolat- a gooey and gorgeously chocolatey melted cake recipes! I made this for Christmas Day! 🎀🤎✨

Ingredients:
225g unsalted butter
225g dark chocolate 
70g cocoa powder 
7 large eggs
265g caster sugar (divided in half into two bowls - approx 132/133g each) 

(Use a 9” springform cake tin)

Recipe:
1. Melt butter and chocolate together over a hot pan of water. 
2. Once melted sieve in the cocoa powder and stir until smooth. 
3. Separate egg yolks and whites - put into two bowls. 
4. In a separate bowl add 133g sugar with the egg yolks and whisk together - until pale and thick. 
5. In another separate bowl whisk the eggs whites (using a clean whisk) until light and fluffy, gradually whisk in the remaining sugar (132g).
6. Pour the melted chocolate and butter mixture into the egg yolk and sugar mixture and stir gently. Fold in two tablespoons of the eggs whites. 
7. Carefully fold in the remaining egg whites, keeping in as much air as possible. 
8. Add 2/3 of the batter in the cake tin- save the rest in a bowl, cover and put in the fridge. (This will become the molten chocolate top layer of the cake.)
9. Cook at 160 degrees fan oven for 25 minutes. 
10. Once the cake is cooled, remove from the tin, place on a baking tray and spread the remaining cake batter on top, cook at 160 degrees fan oven for 10-15 minutes. 
11. Serve with cream or ice cream for a gooey and delicious chocolate dessert! 🫶🏼✨

Let’s make Christmas brookies 🍫❄️🍪🎄

Ingredients:
Brownies 🤎
450g dark chocolate 
280g butter
6 eggs 
450g golden caster sugar 
200g plain flour 
2 tsp baking powder 
2 tbsp cocoa powder
Mini marshmallows 
Extra white, milk & dark chocolate for chocolate chunks 

Use two baking tins the same size and line with baking paper. This recipe I use a 20cm x 30cm tin but if you want a smaller portion I would recommend halving everything and the tin size! 

Cookie 🍪 
125g butter
125g firmly packed brown sugar 
1 egg 
200g self raising flour 
125g white chocolate 

Topping 🍫
70g melted dark chocolate (can be a mix of dark and milk depending on how much you like dark chocolate)
20g butter 

Recipe 
Brownies 
1. Melt the butter and chocolate over a low heat, stirring occasionally.
2. Whisk the sugar and eggs together. 
3. In a separate bowl combine the flour and cocoa powder together 
4. Chop the extra chocolate for the chocolate chunks and set aside 
5. Meanwhile fold the melted chocolate in with the sugar and egg mixture. 
6. Sift in the flour, cocoa powder and baking powder. 
7. Fold in the chocolate chunks 
8. Fold in the marshmallows 
9. Bake at 160 fan oven for about 35 minutes or until the brownie is nearly fully cooked. 
10. Once cooled remove the brownie from the tin so you can add it on top of the cookie mixture. 

Cookie
1. Whisk the butter and sugar together. 
2. Add in the beaten egg slowly to the butter and sugar. 
3. Sift in the flour to the mixture 
4. Add in the chocolate chunks 
5. Bake at 170 fan oven for 5 minutes then add the brownie on top for a further 10 minutes.

Topping
1. Melt the butter and chocolate together and pour over the brookie, and add your Christmas snowflakes. Allow the brookie to cool or refrigerate & enjoy.
