Harissa chicken and courgette lunch boxes

Serves 2/3
You will need…
* 500g boneless skinless chicken thighs
* 2 onions, sliced 
* 2 tbsp harissa paste @belazu
* 1 tbsp EVOO
* 1 courgette, diced
* Handful of peas (I used fresh but frozen is fine too) 
* 250g mixed cooked grains @merchantgourmet
* Handful of fresh parsley, chopped
* Handful of fresh dill, chopped
* EVOO
* Feta cheese, crumbled 
* Pomegranate seeds 

1. Add the chicken, onion and harissa paste to a bowl and mix well.
2. Put on a lined baking tray and bake in the oven for 20-30 mins at 180C fan.
3. Heat in EVOO in a frying pan, add the courgette and peas and fry till they begin to colour a bit. 
4. Stir in the grains and continue to cook until the courgette is relatively soft. 
5. Stir in the fresh herbs. 
6. Share the chicken and grains between your containers, then garnish with crumbled feta and pomegranate.

🥭 Mango and peach collagen chia pudding 🍑 | ad 

Serves 3
You will need…
- 100g mango
- 50g greek yoghurt
- 100ml milk of choice
- 1 sachet of @zooki super strength collagen (mango and peach flavour)
- 4 tbsp chia seeds
- Fresh mango and greek yoghurt  to garnish

1. Blend together the mango, yoghurt, milk and collagen until smooth.
2. Pour the mixture into a bowl with the chia seeds and mix well.
3. Refrigerate overnight, and then add a bit more milk if needed to loosen it up.
4. Share between three glasses and garnish with greek yoghurt and fresh mango.

Aubergine lentil parmigiana 🍆 

You will need…
* 3 aubergines, sliced 
* 1 onion, diced 
* 2 garlic cloves, minced 
* 1/2 tsp chilli flakes
* 2 tbsp tomato puree
* 1 can of chopped tomatoes @muttipomodorouk 
* 240g cooked lentils
* Handful of fresh basil leaves 
* 125g mozzarella
* Parmesan, to garnish

1. Put your aubergine slices on kitchen towel, sprinkle with salt and leave for 15 mins.
2. Pat dry your aubergine slices, add to a lined baking tray, drizzle with olive oil and bake in the oven for 15 mins at 180C fan.
3. Heat a few tbsp EVOO in a large pan, add your onion, garlic and chilli flakes and fry until nice and soft. 
4. Stir in the tomato paste, then add your tomatoes, cooked lentils and fresh basil. Simmer for 15 mins. 
5. Layer your lentil sauce and the aubergines, then top with the mozzarella torn into pieces.
6. Bake in the oven for 40 mins or until golden brown. Then garnish with grated Parmesan.

Chickpea puttanesca

Serves 4
You will need…
* 1 jar of chickpeas, drained @boldbeanco
* 1/2 jar of mixed olives @gaeagreece_uk
* 1 tsp chilli flakes @ocado 
* 4 garlic cloves, minced 
* 5 anchovies, chopped @marksandspencerfood 
* 1 tbsp tomato puree
* 2 tbsp capers @crespo_olivesuk
* 2 cans of chopped tomatoes @muttipomodorouk 
* Handful of fresh parsley, chopped 

Chopping block is from @boroughkitchen 

1. Heat some of the oil from the anchovy tin to a large pan.
2. Add the garlic, anchovies and chilli flakes and fry for a few mins, stirring frequently.
3. Stir in the tomato paste.
4. Add the chopped tomatoes and chickpeas.
5. Bring to a simmer, then add the olives and capers.
6. Continue simmering until reduced and the sauce has thickened.
