Party Food Ideas using the new @mccainukie Vibes.

I was kindly sent a couple of packets of these new vibes, which are in between a crisp and chip and I served these as part of a cheese board/ picky food spread because that seems like the easiest thing to eat in between Christmas and new year! There’s now a new flavour - cheese & onion to buy!

These vibes were firecracker chilli flavour, but there is also cheese and onion and salt and vinegar, and they cook quickly in the air fryer (for best results).

These were a really fun addition to the party food selection and I’d definitely recommend them. I think they are more like chips because they are not completely crunchy as there’s still some some potato inside - and I think that’s the best way to have them. They would be perfect for serving with dips as well because they are like little spoons!

Wensleydale & Caramelised Onion Pinwheels

I was kindly sent a selection of @wensleydale_creamery cheese to try out this Christmas and decided to try out a Christmas canapé using the Wensleydale with cranberries.

On puff pastry I added caramelised onions and generously crumbled the cheese on top, then tightly rolled up the pastry (the tighter you can do this, the neater the pinwheels will be). I then sliced up the roll into 2cm pieces and baked these for 20minutes until the pastry was golden & crispy.

I enjoyed these with a cheese board and some other picky bits, because let’s face it who can decide what to eat this time of these, you may as well have a bit of everything!

This was a really easy canapé to prepare and would be really nice treat if you’re hosting any Christmas drinks/ nibbles. Using the Wensleydale with cranberries made this feel really festive without having to have use lots of different ingredients. Let me know if you’d try this out.

Vegetarian Brie & Cranberry Stuffing Rolls

I’ve seen so many variations of ‘sausage rolls’ on Instagram so thought I had to try and make some because they are such a seasonal treat!

⭐️ Cook the stuff according to packet instructions (I used an 85g pack)
⭐️ Once the stuffing mixture has cooled, I added 20g sunflower seeds, chopped Brie, 2 tbsp cranberry sauce, 1 finely chopped fried onion and garlic clove and mixed this well into the stuffing mixture (season to taste).
⭐️ Next I rolled out the puff pastry and lined one side with more cranberry sauce and thin slices of Brie.
⭐️ I then added the stuffing on top of the sliced Brie and made this into a ‘sausage’ shape.
⭐️ Next I shaped the puff pastry, wrapping up all of the filling, sliced into manageable rolls and gave it an egg wash with 1 beaten egg and topped with some sesame seeds.
⭐️ Bake for ~30 minutes (depending on how big the rolls are) until golden brown.

If I were making these again, I think I would make them a bit smaller but these were such a nice treat and tasted very Christmassy. Stuffing is a very versatile base for vegetarian rolls so you can really tailor these to your own tastes.

Cheesey Butternut Pasta Bake 🧀 🫕

This is a really low effort, but comforting seasonal meal that can be prepped in advanced. Now that the weather is cold, grey and wet outside this really hits the spot. This is a dish I’ve made a few times over the last few years and this time I decided to adapt it a bit which is why I’m not calling it a Mac and cheese this time.

I grated the butternut squash and roasted this in half with some oil and whole garlic cloves for about an hour until it is really soft (easy to put a knife through).

I then blended the butternut squash, roasted garlic (without skins) any leftover oil from the roasting tray, salt pepper and a whole tub of cottage cheese to add a more cheesy flavour and protein.

I added this to cooked pasta and baked with some more grated cheddar and mozzarella on top until crispy and golden. This is such a treat of a meal. The cottage cheese does make this sauce a little bit less creamy but I still really enjoyed it.
