The best way to use up end of summer veggies is inside a loaf of focaccia or two! Obsessed with my new @lecreuset Bread Oven (in the newly launched Château color, obviously)

Ratatouille Focaccia (makes 2 loaves)
1 envelope active dry yeast
3 tsp granulated sugar
2 ½ cups water, warmed to 115 degrees
630 g bread flour
1 ½ tbsp kosher salt
6 tbsp olive oil, divided, plus more for hands
1 cup + ¼ cup freshly grated parmesan, divided, plus more for topping
½ tsp freshly ground black pepper

For the Ratatouille 
1 zucchini, small dice
1 eggplant, small dice
1 bell pepper, small dice
½ red onion, small dice
3 garlic cloves, minced
3 tbsp olive oil, for roasting veggies
1 cup cherry tomatoes, halved
1 tsp fresh thyme leaves
Generous pinch of flaky sea salt

Whisk yeast and sugar with warm water, cover and bloom 5 min until bubbly. If it’s not bubbly, start over, life is too short for sad yeast.

Whisk flour and salt, add to yeast mixture, and stir into a shaggy dough. Don’t overmix.

Oil a large bowl, add dough, cover and refrigerate 8 to 24 hours until doubled.

Heat oven to 425°F. Toss zucchini, eggplant, bell pepper, onion and garlic with 3 Tbsp olive oil, spread on a sheet pan and roast 20 to 25 min until caramelized. Cool completely (can do a day ahead).

Let dough sit out 20 min, then divide in half. Coat two Le Creuset Bread Ovens with 2 Tbsp olive oil each (only one? bake the loaves one after the other).

With oiled hands, punch down each piece of dough, gather the edges into the middle, flip, and press into a prepared Bread Oven, easing it toward the corners.

Divide the veggies in half, then scatter half of each portion over the two doughs. Cover and let rise 2 hours until doubled.

Preheat oven to 450°F. Dimple each dough deeply all over. Top with remaining veggies, cherry tomatoes, parmesan, pepper, thyme and flaky salt. Bake 15 min until puffed and golden.

Drizzle each with olive oil, sprinkle with remaining cheese, cover with the lids, and bake 10 more minutes. Cool 15 min, then rip and serve warm with olive oil.
