Mini chocolate cake recipe 
For the Chocolate Cake:
1/2 cup all-purpose flour (60g)
1/4 cup unsweetened cocoa powder (I used Hershey’s) (21g)
1/2 teaspoon baking powder
1/2 teaspoon espresso powder, optional
1/4 teaspoon salt
1/4 cup canola oil (60ml)
1/2 cup granulated sugar (100g)
1 large egg, room temperature
1/2 teaspoon vanilla extract
1/4 cup milk of choice, room temperature (I used whole milk) (60ml)

For the Chocolate Buttercream:
1/2 cup unsalted butter, room temperature (113g)
1 3/4 cups powdered sugar (210g)
1/4 cup unsweetened cocoa powder (I used Hersheys)(21g)
Pinch of salt
1 teaspoon vanilla extract
1–2 tablespoons heavy cream or milk

Instructions:
Preheat oven to 350°F. Grease and line a 6-inch round cake pan with parchment.

Whisk together flour, cocoa powder, baking powder, espresso powder, and salt. In another bowl, whisk oil, sugar, egg, vanilla, and milk until smooth.

Add dry ingredients to wet and whisk just until combined. Pour into pan and bake for about 35 minutes, or until a toothpick comes out with a few moist crumbs.

Cool for 10 minutes in the pan, then transfer to a rack and cool completely.

For the buttercream, beat butter until creamy. Add powdered sugar, cocoa powder, salt, and vanilla and mix on low until combined. Add cream or milk and beat until fluffy.

Frost the cooled cake, slice, and enjoy.

For the Cream Cheese Frosting:
4 oz cream cheese, room temperature (113g)
2 tablespoons unsalted butter, room temperature (28g)
1 cup powdered sugar, sifted (120g)
1/2 teaspoon vanilla extract 
Pinch of salt

Instructions:
Preheat oven to 350°F. Grease and line a 6-inch round cake pan with parchment.

Whisk together flour, baking powder, and pumpkin pie spice. In a separate bowl, mix sugar, brown sugar, oil, egg, vanilla, and pumpkin puree until smooth.

Add the dry ingredients to the wet ingredients and mix just until combined. Don’t overmix.

Pour into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 30–35 minutes. Cool completely.

For the frosting, beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt and beat until fluffy.

Spread over the cooled cake, slice, and enjoy.
