1 orange, sliced
3 cinnamon sticks
1 tablespoon whole cloves
1 tablespoon allspice berries
½ cup brown sugar, maple syrup, or honey (or to taste)
Water to cover

Roughly chop the apples and add everything to a large pot. Fill with water until just covered, then bring to a boil. Reduce to a simmer and cook for about 2 hours. Mash the apples with a spoon, then simmer another 30 minutes. Strain through a fine mesh sieve or cheesecloth, and serve warm.

Make it now so you’re ready to battle those viruses when they hit this cold/flu season!

This spicy tonic is a popular folk medicine used to boost the immune system and combat colds and flus. It’s a mixture of beneficial fruits, vegetables, and herbs that are topped with vinegar and allowed to steep for a few weeks until it’s strained and ready to be used as a tea (mixed with hot water,) salad dressing, or an addition to soups, stews, sauces, marinades, and other foods.

It’s super easy to make, and fairly foolproof as there’s no one recipe to follow. For mine, I layered my ingredients in a sterile jar in order of color (hence the rainbow title,) and then topped completely with apple cider vinegar. Let it steep for a few weeks and then drink little bits to help boost your immune system. I used tampered pomegranate arils, rose hips, oranges, lemons, limes, red onion, garlic, horseradish (fresh from the garden,) ginger, turmeric, and cayenne. I’ll add honey after it’s been strained simply because I ran out of space. Some other common additions include: black pepper, jalapeño, echinacea, rosemary, oregano, and thyme, but a simply google search will give you even more ideas for beneficial ingredients to add.
