I knew I wanted to use Icewine with the sauce for our fish platter. I love the sweetness and unique character it brings.

We tasted through a number of wines from @inniskillinwines , and there were some that were incredible on their own — especially the sparkling wines.

But when we paired them with the food, the Vidal Gold stood out.

Our Choron sauce with brown butter and geoduck was rich, nutty and buttery, with the delicate sweetness and salinity of the geoduck. The Vidal Gold brought the sweetness and acidity together to balance the richness, while complementing the natural sweetness of the geoduck.

Thank you to Inniskillin for supporting our Bocuse d’Or journey and giving us the opportunity to explore these wines as part of the process.

As part of that journey, we had the opportunity to visit the Martin family farm in Mapleton. It’s always a pleasure to share a passion, learn from others, and experience a different perspective within our industry.

This visit was a reminder that the story of food starts before it reaches the kitchen. As chefs, I believe it’s important that we understand where our food comes from—and are able to share that story with our teams and our guests.

I also connected with the Martin family’s story. Like many of us in this industry, their family has built generations around the same craft while continuing to evolve with the times.

One of the cool parts was seeing how they grow all of their own feed for the cattle. Their corn is grown on the farm, then steamed, flattened and dried to make it easier for the cattle to digest—essentially, corn flakes for cows.

A great experience, great conversation, and a deeper appreciation for the people and process behind the food we cook.

Some moments that nobody really saw. While trying to have some fun with each other. 

The hours spent trying to make something 1% better. The small details that probably wouldn’t matter to anyone watching — but mattered to us.

A garnish moved a few millimeters. A sauce adjusted by a few grams. A mold that didn’t fit the way we wanted it to. Having a pot facing the right direction. A component cooked one more time to see if it could be just a little better. Each move calculated. 

In a competition where everyone is talented, the difference comes down to the things most people never notice.
