Garlic bread smash burgers Ingredients: 300g 5% mince meat 2 brioche burger buns 1 onion 2 tsp honey 2 large potatoes 4 tbsp burger sauce 4 cheese slices 1 tbsp butter Sprinkle of fresh parsley 2 tsp garlic granules - Slice the onion, and add to an oiled pan along with the honey. Fry off until soft and browned, keep stirring so no bits burn - around 15/20 minutes - Combine the mince meat with salt & pepper, and portion into 4 balls. Add to an oiled pan and smash as thin as possible, (I used a pan) then fry off for 7 minutes until cooked through and browned. Add the cheese on top of each burger, take off the heat and pop the lid on to melt. - Chop the potatoes into chips, add to the airfryer and coat in oil, salt, pepper, cajun and a sprinkle of chili flakes. Cook on 180 for 30 minutes - no need to parboil - Melt the butter and add the parsley and garlic. Coat the buns and toast the buns. Layer up as shown in the video, wrap the burgers in foil and place back into the airfryer for 5 minutes!
Fajita chicken loaded sweet potatoes Ingredients: 2 chicken breasts 4 sweet potatoes (seasoning: 1 tsp Cajun, 1 tsp garlic, 1 tsp paprika, sprinkle of chilli flakes) Half a packet of bbq fajita seasoning 1 /2 an onion 1 pepper 75g crème fraiche Dash of water 1/2 avocado 40g cheese - Chop the sweet potatoes into chunks and add to the airfryer. Drizzle over oil and the seasoning, give it a good shake and add to the airfryer for 20 minutes on 185. - Add the chicken to an oiled pan and cook until browned and white through, sprinkle over the fajita seasoning and add the dash of water. Leave this on a low simmer for 5 minutes then turn down the heat and add the crème fraiche. Stir until combined. Then let this cook for about 5 minutes until it thickens. - Meanwhile, add the onion and pepper to a separate pan and leave on a medium heat with the lid slightly off to soften for around 10-15 minutes. - Mash the avacado to make some guacamole, and season with salt and pepper. - Once everything is cooked, layer the chicken and veg on the potatoes and add the cheese. Melt in the microwave for 30 seconds , then add the guacamole and a sprinkle of parsley.
Creamy Cajun chicken & bacon pasta Ingredients: 140g pasta 2 chicken breasts 2 rashes of bacon 1 onion 1 clove garlic Seasoning: 2 tbsp cajun, 2 tbsp garlic, 1 tbsp chilli flakes (half for chicken / half for sauce) 150ml chicken stock 150g crème fraiche 100ml milk 50g parmesan Fresh basil - Grilled the bacon until crispy and chop until fine chunks - Season the chicken and add to a oiled pan, cook on both sides sides until slightly golden then add to the airfryer for 15 minutes on 185 - Add the pasta onto boil - To the same pan as the chicken, add the onion and soften. Add the garlic and seasoning and leave to cook off for a few minutes on a medium heat. Turn the heat down and add in the stock, then bring to a gentle simmer and allow to thicken slightly - this will take around 5 minutes. - Turn the heat down again and add the crème fraiche and milk, stir until combined then slowly increase the heat until the sauce is simmering. Leave this until the sauce has thickened, add in the3/4 of the cooked bacon, parmesan and a handful of chopped basil. - Add the pasta to the sauce, serve and add the chicken on top along with the bacon bits saved from earlier.
mini egg banana bread muffins Ingredients: 3 over ripe bananas, mashed 150g butter 150g caster sugar 175g self raising flour 2 eggs 1 tsp vanilla essence 75g milk chocolate chips 175 of mini eggs - melt the butter and whisk the sugar in for a couple of minutes - whisk in the eggs & vanilla - Mix in the mashed banana - Fold the flour in, once mix is combined add in your chocolate chunks & crushed mini eggs, saving some for the top - evenly divide between 13 muffin cases and add the other chocolate chips and mini eggs to the top - bake for 22 minutes on 190
