Spaghetti Carbonara like we do it in Rome 😎

Real Roman carbonara is just five ingredients: guanciale, egg yolks, Pecorino Romano, black pepper and pasta. The creaminess comes from emulsifying the egg, cheese, fat and starchy pasta water off the heat. No cream, no garlic, no scrambled eggs. Once you get the technique, you’ll never go back to the jarred stuff.

Recipe for 1 serving – full recipe below 👇

INGREDIENTS

Spaghetti – 100 g / 3.5 oz
Guanciale – 50 g / 1.75 oz
Egg yolks – 2
Pecorino Romano, finely grated – 30 g / ⅓ cup
Black pepper, freshly cracked – to taste
Salt (for the pasta water) – to taste

PROCEDURE

	•	Bring a pot of water to a boil and salt it lightly (the guanciale and pecorino are already salty).
	•	Cut the guanciale into strips and render it in a cold pan over medium-low heat until crispy.
	•	Turn off the heat and set the guanciale aside, keeping the fat in the pan.
	•	Whisk the egg yolks with the pecorino and lots of black pepper into a thick paste.
	•	Cook the spaghetti until 1–2 minutes before al dente.
	•	Move the spaghetti to the pan with the fat and add a splash of pasta water.
	•	Let the pan cool slightly, then add the egg mixture off the heat, tossing quickly.
	•	Add pasta water a little at a time until the sauce is creamy and glossy.
	•	Fold in the guanciale, top with more pecorino and pepper, and buon appetito! 🍝

FOI2 - CAMPANIA

Polipetti alla Luciana – 🇮🇹 – Flavours of Italy – Episode 9

In Naples there’s a saying: the octopus cooks in its own water. It comes from Santa Lucia, the old fishermen’s quarter by the sea, where the “luciani” brought home baby octopus and braised them slowly with tomato, olives and capers. They used no stock and added no water. The octopus releases its own juices and turns tender on its own. 🐙

I braised mine low and slow for 40 minutes in my @ptal copper pan. It’s handcrafted from 100% pure copper and naturally nonstick, and the even heat helps keep up to 6x more nutrients. That means no hot spots and no scorched sauce.

Comment COPPER and I’ll send you the link to get your own @ptal.usa set!

Full recipe below 👇

INGREDIENTS
Baby octopus, cleaned – 300 g / 10.5 oz
Extra virgin olive oil – 30 ml / 2 tbsp
Garlic, sliced – 2 cloves
Chili flakes – 1 g / ½ tsp
Cherry tomatoes, halved – 250 g / 9 oz
Gaeta or black olives – 30 g / ¼ cup
Capers, rinsed – 10 g / 1 tbsp
Fresh parsley, chopped – 5 g / 2 tbsp
Salt – to taste
Crusty bread – to serve

PROCEDURE
* Warm the olive oil with the garlic and chili over low heat.
* Add the cherry tomatoes and cook for 5 minutes until they start to break down.
* Add the olives and capers.
* Add the baby octopus. Don’t add any water.
* Cover tightly with a lid and braise low and slow for 40 minutes.
* Check that the octopus is tender and the sauce has thickened.
* Taste before salting, since the olives and capers are already salty.
* Finish with parsley and a drizzle of raw olive oil.
* Serve with crusty bread for the scarpetta. Buon appetito!
