shakshuka w/ ground beef 🍅🍳

Welp, I’m now hyper fixated on this meal. One pan, easy prep, satiating, healthy, and most importantly, delicious. I made this like 3 times last week. I had a bunch of tomatoes sitting around from the farmers market, so this just made sense. I really recommend using a combination of different tomatoes if you can. The cherry tomatoes added a nice sweetness.

the perfect lunch = a tuna melt 🐟🥪

I work a full time job from home most of the time, so I’m always pressed for time while making lunch. A lot of times I have less than 30 minutes to prep, cook, and eat. This is a go to of mine at least 2-3 times a week. It’s cheap, quick to make, high protein, and most importantly, tastes really good. 

Ingredients:

- 1 can of tuna
- 2 slices of sourdough
- 1/4 cup red onion (diced)
- 1 pickle (diced)
- 4 sweet and spicy jalapeños (diced)
- 2 tbsp parsley (chopped)
- 2 tbsp dill (chopped)
- 1/2 lemon (juiced)
- 1/4 cup greek yogurt
- 1 tbsp Dijon mustard
- 1 tsp chili oil crunch
- 1 tsp honey
- Salt
- Pepper
- 1 slice of aged cheddar cheese 
- 1 thick slice of heirloom tomato

Method:

- combine all your mix ins
- Toast bread in some oil 
- Throw your mixture on the bread and top with some delicious cheese
- Melt that cheese
- Add a tasty tomato slice on top with some flaky salt
- Cut your sandwich diagonally

what I eat after the gym, pt. 26

doner kebab beef bowl 🥩🥗

After making this a while ago, I had to run it back. This time in a bowl. It was even better since I used ground beef. This will truly be a staple in my household going forward. 

Approximate Macros (per serving, this made about 2.5-3 servings)

~805 calories | ~56g protein | ~ 95g carbs | ~23g fat

Ingredients:

- 1 pound of lean ground beef (i used 96/4)
- 2 cloves of garlic (minced)
- 1/4 red onion (minced)
- 2 Persian cucumbers (diced)
- Pickled onions (recipe below)
- Cherry tomatoes
- 1 yellow (or whatever color) bell pepper (sliced)
- Basmati rice (use turmeric for the color and slight bitterness)
- Feta cheese (topping)
- Salt
- Pepper
- Paprika

Chili garlic yogurt sauce

- 1/2 cup of Greek yogurt (I used fat free)
- 2 cloves of garlic (minced)
- 1 tbsp of dill (chopped)
- 1 tbsp parsley (chopped)
- 2 tsp chili oil crunch
- 1 tsp olive oil
- 1 tbsp honey
- Salt
- Pepper

Pickled Onions

- 1 red onion (sliced)
- 1 cup of water
- 1 cup of white vinegar 
- 1 tbsp honey
- Salt
- Pepper
- 1/4 cup of parsley (chopped)

Method:

- preheat oven to 400 degrees
- Mix your ground beef with minced garlic, minced onion, salt, pepper, paprika
- Place ground beef mixture on parchment paper or foil. Place another piece of paper or foil on top and roll it out with a rolling pin until even. Take off the top sheet and roll it up. 
- Place your rolled meat into a baking dish. Add in your cherry tomato’s and sliced bell pepper. Drizzle olive oil on top. 
- Put in the oven for 30-45 minutes
- While that cooks, make your pickled onions by bringing your water, vinegar, and honey mixture to a boil and pouring over your onions. Once cooled, add your parsley. 
- Now prepare your chili garlic yogurt sauce. Combine yogurt, dill, parsley, garlic, chili oil crunch, honey, olive oil, salt, pepper and combine. You want the consistency pretty thick like yogurt
- Next, prepare your cucumbers by dicing them up.
- Once your pan is done, roll the meat out and break it up into pieces.
- Prepare your bowl and crumble some feta cheese on top.

crying tiger steak with cabbage & chickpea salad, served w/ rice 🥩🍚🥗

If you’re looking for a way to elevate your next steak, make this. Ridiculous amount of flavor with every bite. Salty, sweet, spicy, tangy. It hits all the bases. So I thought why not just use it as the salad dressing as well. Don’t skip the toasted rice powder either, it ties it all together. 

Approximate Macros (per serving, leftover salad and sauce)

~660 calories | ~62g protein | ~ 58g carbs | ~19g fat

Ingredients:

- 2 top sirloins (or whatever steak you want)
- 1/4 of a whole red cabbage (chopped)
- 1 can of chickpeas (roasted) 
- 1 cup of cilantro (lazily chopped)
- Toasted rice powder - for this, toast some dry rice in a pan with a basil leaf and grind until it’s fine like a powder
- White rice
- Salt
- Pepper
- Paprika

crying tiger sauce:

- 3 tbsp fish sauce (get a really good one)
- 3 tbsp lime juice
- 1/4 cup water
- 1 tbsp honey
- 2 cloves of garlic (minced)
- 1 or 2 red chili peppers (diced)
- 2 tbsp cilantro (chopped)
- 2 tbsp green onion (sliced)
- 1 tsp chili oil crunch 
- 1 tsp toasted rice powder

Method:
- pat steaks dry and season with salt. Let sit in fridge for about 30 minutes while you prepare everything else.
- Preheat the oven to 400 degrees.
- Pat your chickpeas dry and season with oil, salt, and paprika. Roast in oven for about 30 minutes or until crispy and crunchy.
- Make your crying tiger sauce by combining all the ingredients together and stirring. Taste and add what you desire until you got the perfect taste.
- Prep salad ingredients and mix into a bowl. Add in chickpeas once they’ve cooled down a bit. 
- Add some of your crying tiger sauce on  to the salad and toss.
- Now grab your steaks out of the fridge and pat dry.
- Heat your pan over medium low and cook the steak for about 2-3 minutes each side. 
- While steak rests, start to plate up your salad and rice.
- Drench your steak in crying tiger sauce.
