Pan Seared Lamb Chops

Lamb Chop Marinade:

10-12 individual lamb chops
1 cup fresh parsley (large stems removed)
2 tsp dried thyme
2 rosemary sprigs (stems removed)
8 mint leaves
10 garlic cloves (roughly chopped)
1 shallot (roughly diced)
1 tsp allspice
2 tsp salt
2 tsp pepper
1 tbsp freshly squeezed lemon juice
1 cup olive oil (add more for a thinner marinade)

Pan Sauce:
4 tbsp unsalted butter
1/2 cup beef stock

Instructions:

Combine all marinade ingredients in a food processor, blender, or use an immersion blender to form a smooth mixture. Taste and adjust with salt/pepper if desired. 

Pour the marinade over the lamb chops and rub it in thoroughly. Cover and refrigerate for up to 24 hours. If pressed for time, cooking immediately is also an option.

Heat a large skillet (preferably cast iron) over high heat. Sear the lamb chops for about 2-3 minutes on each side (depending on thickness), then finish in the oven (350F) until the internal temperature reaches 145F. Adjust cooking time based on your preferred level of doneness.

Remove the lamb chops from the pan and allow them to rest on a cutting board or wire rack for 5 minutes.

Pan Sauce for Lamb:

Using the same skillet, reduce the heat to medium. Add 4 tablespoons of unsalted butter and 1/2 cup beef stock.

Scrape up the browned bits from the bottom of the pan while stirring the sauce for 1-2 minutes.

Pour the sauce over the lamb chops and serve immediately.

Loaded Protein Sweet Potato Boats

INGREDIENTS:
3–4 large sweet potatoes
Olive oil, as needed
2 lbs ground beef
½ red onion, diced
5 garlic cloves, pressed or minced
3 tbsp Italian seasoning
1 tbsp ground cumin
3 tbsp chili powder
4 tbsp smoked paprika
3 tsp salt, more or less to taste
2 tsp coarse black pepper
4 tbsp tomato paste
1 cup cooked chopped spinach or frozen chopped spinach, thawed and squeezed dry
Shredded cheese, as needed
Additional toppings of your choice

INSTRUCTIONS:

Preheat the oven to 400°F.

Use a fork to poke several holes around each sweet potato for ventilation. Lightly coat the sweet potatoes with olive oil and place them on a lined baking sheet.

Bake for about 60 minutes, flipping halfway through, or until the sweet potatoes are soft and tender. Cooking times may vary depending on the size of the sweet potatoes and your oven.

While the sweet potatoes are baking, place the ground beef and diced red onion in a large skillet over medium-high heat. Cook, breaking the beef apart as it browns.

Add the garlic, Italian seasoning, cumin, chili powder, smoked paprika, salt, and black pepper. Mix everything together and continue cooking until the ground beef is fully cooked. Drain any excess grease if needed.

Add the tomato paste and chopped spinach. Stir until everything is fully incorporated and cook for another 3–5 minutes. Taste the beef mixture and adjust the seasonings to your preference.

Remove the sweet potatoes from the oven and allow them to cool slightly. Cut each sweet potato open lengthwise and gently separate the inside with a fork.

Fill each sweet potato with as much of the ground beef and spinach mixture as you would like. Top with shredded cheese and place under the broiler until the cheese is completely melted.

Finish with any additional topping of your choice and serve.

Simple ingredients, chilled until set, then finished with a little brown sugar on top. Nothing crazy, just one of those desserts that looks way harder than it actually is.

Definitely worth making.

Lemon Brûlée Posset

Ingredients

4 large lemons (washed) 
1 1/2 cups heavy cream
1/2 cup sugar
3 Tbsp fresh lemon juice
2 to 3 Tbsp brown sugar for topping

Instructions

Slice 3 of the lemons in half lengthwise, then carefully scoop out the flesh while keeping the lemon shells intact. Set the lemon shells aside.

Squeeze or press the lemon flesh through a fine mesh strainer until you have about  3 tablespoons of lemon juice. Set the juice aside.

Zest the 4th lemon and add the zest to a saucepan with the heavy cream and sugar.

Bring the mixture to a gentle simmer over medium low heat, stirring often. Let it simmer for about 5 to 8 minutes, or until the cream slightly thickens and coats the back of a spoon.

Remove the saucepan from the heat, then stir in the fresh lemon juice. Let the mixture sit for 2 to 3 minutes so it can start to thicken.

Pour the mixture into the hollowed out lemon shells and place them in the fridge for at least 4 hours, or overnight.

Once set, sprinkle the tops with brown sugar and use a kitchen torch to melt and caramelize the sugar.

Let the sugar harden, then serve cold.
