Crockpot Chuck Roast Kalbi 🔥🐄

Welcome to my Crockpot Meals series, where I help you make easy recipes so good, you might just find a spouse—or impress the one you’ve already got. 😘

Kalbi is usually made with short ribs, but those can get expensive. So I used an affordable chuck roast from @costco and gave it those same sweet, savory, garlicky flavors, and let the @crockpot turn it fall-apart tender.

Ingredients:

2 lbs chuck roast
Your favorite beef seasoning
1 cup shoyu
1/2 cup brown sugar
1/4 cup sesame oil
1/4 cup rice vinegar
2 tablespoons Thai chili
2 tablespoons grated ginger
2 tablespoons minced garlic—or jarlic
1 cup grated Asian pear
Favorite seasoning @thebeardedbutchers 

Instructions:

1. Pat the chuck roast dry and season it on every side. Go light on the salt because the shoyu will bring plenty.
2. Heat your @anolon frying pan over medium-high heat and add 2T butter. Sear the roast on all sides until you build a beautiful crust. We aren’t cooking it to temperature—we’re just building flavor.
3. Mix the shoyu, brown sugar, sesame oil, rice vinegar, Thai chili, ginger, garlic, and grated Asian pear.
4. Place the seared chuck roast in your crockpot and pour the kalbi mixture over it.
5. Cover and cook on LOW for 4–6 hours, or until the meat pulls apart easily. A thicker roast may need a little longer, so let tenderness—not just the clock—tell you when it’s ready.

This was seriously delicious and couldn’t have been easier to make. The crockpot did the work. You take the credit—and collect your kiss. 🤙🏽

Pork Bulgogi Steaks 🔥🐖

Welcome back to Big Flavors for Less, where I turn affordable pork butt into flavor-packed pork steaks.

This time we’re marinating them in a sweet and savory bulgogi marinade with Asian pear, garlic, ginger and sesame oil. Then we’re going outside to touch grass and grill them over charcoal on our beautiful @oklahomajoes Bronco Drum Smoker & Grill for that caramelized char and smoke flavor you’re not going to get from being indoors.

Ingredients:

2–2½ pounds pork shoulder steaks
½ cup soy sauce
¼ cup brown sugar
½ cup grated Asian pear or pear purée
½ small yellow onion, grated
2 tablespoons mirin
2 tablespoons sesame oil
1 tablespoon minced garlic
1 tablespoon grated ginger
1 teaspoon coarse black pepper

Instructions:

1. Cut the pork butt in half. Slice approximately ½-inch steaks from the more tender side and save the tougher portion for pulled pork. I used my carving knife from @montanaknifecompany 
2. Blend the soy sauce, brown sugar, Asian pear, onion, mirin, sesame oil, garlic, ginger, black pepper, green onions and sesame seeds. 
3. Reserve ¼ cup of the marinade before adding the raw pork. Coat the pork steaks in the remaining marinade and refrigerate overnight. I used my @bbq_dripez 
4. Fire up your charcoal grill and cook the pork steaks over medium-high heat, flipping as needed to build a deep caramelized char without burning the sugar.
5. Brush with the reserved marinade during the final minute. Cook the pork to at least 185-200, where it’s tender, then rest for 5 minutes before slicing.
6. Serve with steamed rice, kimchi and grilled vegetables.

Tocino Pork Steaks 🇵🇭🔥🐖

This is Big Flavors for Less, where I turn affordable pork butt into flavor-packed pork steaks.

Today we’re making sweet, garlicky pork tocino steaks loaded with caramelized char and smoke flavor. 🔥

I used my @bbq_dripez Prep Tub as my cutting board, cut the pork butt in half, and sliced steaks from the more tender side. Save the tougher half for pulled pork—that’s two completely different meals from one affordable cut.

The Prep Tub’s BPA-free silicone and FDA food-contact compliance are important to me, especially when some of the lookalike dupes sold online don’t meet those same standards. Once I finished cutting, I opened the tub and used it to marinate the pork without dirtying another container.

Pork Tocino Steaks

Ingredients:

2 pounds pork shoulder steaks
1 cup brown sugar
1 cup pineapple juice
¼ cup soy sauce
2 tablespoons vinegar
8 garlic cloves, minced
10–20 drops red food coloring, optional

Instructions:

1. Cut the pork butt in half. Slice approximately ½-inch steaks from the more tender side and save the tougher portion for pulled pork.
2. Combine the brown sugar, pineapple juice, soy sauce, vinegar, garlic and optional red food coloring in the Drip EZ Prep Tub.
3. Add the pork steaks and marinate for at least 4 hours or up to overnight.
4. Fire up the @oklahomajoes Bronco with @cowboycharcoal lump charcoal.
5. Grill the pork steaks over medium-high heat, flipping as needed to build that caramelized char and smoke flavor without burning the sugar. Cook to at least 190-200F, then rest before slicing.

Some of you mouth breathers need to go outside, breathe some fresh air and cook on the grill. Chaddup yo mouth ! 🤙🏽🔥

Chick-fil-A Chicken & Waffle Recipe 🍗🧇 

Chick-fil-A released chicken and waffles for National Waffle Day, but I couldn’t order it through the app… so I made my own

Crispy spiced chicken, fluffy Belgian waffles, and buttery @melindasfoods Hot Honey maple syrup. It was so good I needed to throw something. 😂🔥

CHICK-FIL-A–INSPIRED CHICKEN & WAFFLES
Makes 8

CFA SEASONING
1/4 cup sweet paprika
1 Tbsp smoked paprika
3 Tbsp garlic powder
2 Tbsp onion powder
1 Tbsp ground black pepper
2 Tbsp MSG
2 tsp cayenne, or 1 Tbsp for hot
1 Tbsp kosher salt

CHICKEN & MARINADE
4 boneless chicken thighs, halved horizontally
1 1/2 cups buttermilk
1/4 cup pickle juice
1/3 of the seasoning mixture
Oil for frying

DREDGE
2 cups all-purpose flour
1/2 cup cornstarch
2 Tbsp baking powder
Remaining 2/3 of the seasoning mixture

HOT HONEY SYRUP
1/2 cup maple syrup
1/4 cup Melinda’s Hot Honey
2 Tbsp butter

INSTRUCTIONS

1. Mix the seasoning and divide it into thirds. Whisk together the buttermilk, pickle juice, and 1/3 of the seasoning. Coat chicken in flour and let dry for 10 minutes 
2. Then combine the dredge ingredients. Preheat oil to 350 degrees
3. After 10 minutes, dip the chicken in the buttermilk mixture then the dredge
4. Fry at 350°F for 5–7 minutes, until golden brown and 165°F internally. Drain on a wire rack.
5. Mix the box waffle mix
6. Fry in mini waffle maker
7. Warm the maple syrup and hot honey over low heat. Whisk in the butter until smooth.
8. Stack the chicken on the waffle and drown it in that hot honey syrup. Try not to throw anything. 😂 @cuisinart may need a new mixer
