The beetroot stalks and leaves you might usually throw out make a beautiful Korean side salad, known as ‘namul’ 🫜🌶️

Chop the stalks into matchstick size, then blanch in boiling water with the leaves for 30 seconds. 

Make a dressing using: 
- 1.5 tbsp soy 
- 1 tsp rice vinegar 
- 1 tsp sesame oil
- 1/4 tsp sugar 
- 1/4 tsp chilli flakes

Toss well in a bowl with sliced spring onion and lots of sesame seeds, and enjoy 🫶

Here’s how to get mushrooms super crispy and packed with flavour👇

🍄‍🟫 Dry the mushrooms thoroughly
🍄‍🟫 Cut into chunks instead of slices
🍄‍🟫 Toss with lots of neutral oil (around 2tbsp per 250g)
🍄‍🟫 Don’t overcrowd the baking tray
🍄‍🟫 Roast in a super hot oven (around 230° fan) until deeply golden and crispy 
🍄‍🟫 Don’t add salt until the end or after cooking
